Edible films for packaging and plastic material replacement purposes are produced based on biodegradable raw materials such as polysaccharides and agents with biological properties, making the final product an alternative for the protection and extension of the shelf life of foods. The main objective of the present research was to evaluate the antioxidant and antimicrobial activity of chitosan biofilms functionalized with muña essential oil. For this purpose, 12 edible films were formulated with 3 concentrations of chitosan (1, 2 and 3%) and 3 of essential oil (0.5, 2 and 5%) including chitosan-only blanks. Muscle proteins of Dosidicus gigas mantle have great techno-functional advantages and during their processing at industrial level considerable discards of muscle proteins are generated and used to elaborate meals with low added value. Context: Ceramic veneers are shown as an excellent alternative to improve dental aesthetics with ideal optical and mechanical properties. The objective of this study, was to evaluate the influence of the cementing agent and artificial aging on the veneer´s color. Material and Methods: For this, 30 human premolars were carved to receive veneers made with 0.5mm thick porcelain of the same color. The tooth-veneer sets were randomly separated into three groups (n = 10). A first color measurement was performed on each tooth using the Vita Easyshade colorimeter. Wood plastic composites of recycled polypropylene PPr and Pinus elliottii (PIE) were developed using soybean oil, stearic acid, caprylic acid and itaconic acid grafted with polypropylene (PPgAI) as coupling agents. The composites were processed in a co-rotating twin screw extruder and injection molded. The materials were characterized by mechanical properties, thermogravimetric analysis, morphological, physical and contact angle. The results showed that soybean oil acted as a plasticizer and reduced mechanical properties of composites. On the other hand, the addition of stearic acid, caprylic acid and PPgAI resulted in an increase in flexural strength of 8, 20 and 29%, respectively, when compared to the composite without compatibilizer. In order to improve the organoleptic properties of giant corn fried snack, the effects of chemical peeling agent type (CaOH or NaOH), immersion in peeling solution, cooking time, and grain moisture content before frying, were studied. NaOH was found to be more effective than CaOH as a peeling agent of corn. Nixtamalization flavor was best developed and a lighter snack color was obtained when corn grains were immersed in the peeling solution of NaOH for 6 h. A longer cooking time (0, 8, 16 min) yielded a larger grain expansion. By adjusting grain moisture content (before frying) by drying, the texture of the snack could be controlled.
