Evaluate the effect of gaseous ozone on physicochemical characteristics, molds and yeasts count and overall appearance of granada. Wonderful variety fruits of granada was collected in a glass chamber where the gas is injected using ozone generator equipment with flow of 500 mg / h and a digital meter for measuring the ozone concentration. A central composite design rotable (CCDR) was used to analyze the effect of the concentration of ozone gas and storage time (p < 0.05) on weight loss, firmness, shell color, soluble solids, mold and yeasts count, total anthocyanins content and overall appearance. It was determined that the concentration of ozone gas had significant effect on the responses studied variables. The quadratic model provided the best fit of data. The main objective of this work to estab1ish the controlled use of heat as a function of the pH in order to destroy all the microorganisms that are this bacterias anaerobic forced thermopiles and essentially mesófilas. The bacteria more resistant esporulada to 1he heat is Clostridium botulinum and it is considered lndicative microorganísm of the sterellization. Another parameter of very important control is the quality of the matter it prevails that it can resist the operations of thermal prcsecution, the classification is made in function to the hat size, weight, color and it forms.

Scallion (Allium fistulosum) is a highly perishable green vegetable due to its moisture content, its high metabolic rate and their poor conditions of post-harvest during to harvest and transport. The objective of this research was to determine the relationship between visual deterioration´s product and changes generated in the mechanical and acoustic properties of the same. The scallion grown in Aquitania, Boyacá Colombia was stored under different conditions of storing: vacuum packed (10 mbar) and unpacked (HR 68%) and storage temperature 4 ºC and 16 ºC until deterioration by visual appearance. The acoustic mechanical changes in firmness, crispness and fracture for unpacked scallion and stored at 4 °C occurred on day 15 of storage, and visual deterioration on day 13. El objetivo de este manuscrito fue evaluar el efecto del aceite esencial de muña (Minthostachys mollis) en el recubrimiento a base de harina de maca negra (Lepidium meyenii Walp.) y montmorillonita para prolongar la vida útil del melón (Cucumis melo L.) mínimamente procesado. Los cubos de melón se dividieron en cuatro tratamientos: T1 control (sin recubrimiento), T2, T3 y T4 con 0,1 % v/v, 0,2 % v/v y 0,3 % v/v de aceite esencial de muña respectivamente, además se les adicionó harina de maca (2,5 %) y montmorillonita (0,3 %), posteriormente todos los tratamientos se almacenaron durante 12 días a 5±1 °C. The application of edible coatings obtainable from alternative biodegradable materials has gained attention as a promising treatment to prolong the shelf-life of fresh-cut vegetables. Thus, this work aimed to develop a biodegradable coating based on fruit and vegetable residues flour. Immersion coating strategy was studied on the quality of minimally fresh-cut carrots during refrigeration storage by means of weight loss, color variation, pH, titratable acidity and soluble solids content. Better performance was obtained for coated carrots, which exhibited a tendency to have lower whiteness index than uncoated counterparts and enhanced overall quality. Despite a drop in color saturation expressed by chroma values (varying from 59 to 46) was observed, color index presented a positive value for all samples (varying from 13 to 15) indicating orange color preservation throughout storage. Accurate determination of plant water status is mandatory to optimize irrigation scheduling and thus maximize yield. Infrared thermography (IRT) can be used as a proxy for detecting stomatal closure as a measure of plant water stress. In this study, an open-source software (Thermal Image Processor (TIPCIP)) that includes image processing techniques such as thermal-visible image segmentation and morphological operations was developed to estimate the crop water stress index (CWSI) in potato crops. In this paper, the technical, financial and legal feasibility of employing solar cogeneration for the food industry sector in Peru will be demonstrated. In consequence, we will quantify the electric and thermal energy obtained from a conventional Rankine cycle, with the particularity that the water used to condense the steam that exits the turbine will be employed for the required processes in the industrial plants, because of the high temperature obtained from the heat exchange with the steam. This paper proposes a procedure to minimize electrical losses present in industrial systems, through a specific program developed for this purpose, based on Genetic Algorithm, and written using MATLAB instructions.The minimization is realized with the placement of shunt capacitors connected to the buses. For validation of the proposed method, it is considered accuracy and speed, and the developed program´s results are compared with the results produced by traditional programs. The program avoids leading power factor at the bus connected with the power distribution company and the user may determine buses where he does not want the installation of capacitors. The Genetic Algorithm's fitness, responsible for guiding the optimization process, is the active power loss. Finally, the program is applied to minimize active losses present at an industrial system, 38 buses.

In this work we study the effects on the porosity and microhardness properties when using different ZrO2 + 8% Y2O3 diameters powders (less than 40 μm, between 40 to 60 μm and greater than 80 μm) to deposit in the upper layer of a TBC system (thermal barrier coating) of double layer formed by NiCrCoAlY and ZrO2 + 8% Y2O3 using the plasma spray process, in order to find the suitable powder and feasible to use as top layer. To this end, instruments such as TESCAN Vega SB scanning electron microscope with INCA Energy dispersive microanalyzer were used, with which it was possible to detect the porosity in different areas of evaluation of the upper layer and the Vickers durometer to measure the microhardness. Verifying that with particle diameters smaller than 40 μm, the aforementioned properties are adequate for the conformation of the ZrO2 + 8% Y2O3 top layer.

It was determined the parameters of thermal treatment for the maximum retention of color (5,83 %) and texture (2,29 %) of canned green beans (Vicia faba L.) in brine, to processing temperature 126,7 °C for a time of 8,69 minutes, by Jen et al method. The tests were made with green beans from Mantaro valley, in Peru. Likewise, was realized the evaluation of the thermal treatment to determinate characteristics of heat penetration in the slower warming point (3,8 cm from base of can) finding the following results: fh = 19,34 minutes, jh = 0,46; Tpsih = 95,6°C, fc = 16,67 minutes, jc = 1,11 and Tpsic = 123,2°C; and the times of processing, by Stumbo method, to temperatures 104,4; 110; 115,6; 121,1; 126,7 and 132,2°C, being the times of processing 108,79; 54,76; 24,72; 13,77; 8,69 and 5,51 minutes, respectively, to obtain in all cases the same value of F121,1°C of 3,15 minutes.
