The application of edible coatings obtainable from alternative biodegradable materials has gained attention as a promising treatment to prolong the shelf-life of fresh-cut vegetables. Thus, this work aimed to develop a biodegradable coating based on fruit and vegetable residues flour. Immersion coating strategy was studied on the quality of minimally fresh-cut carrots during refrigeration storage by means of weight loss, color variation, pH, titratable acidity and soluble solids content. Better performance was obtained for coated carrots, which exhibited a tendency to have lower whiteness index than uncoated counterparts and enhanced overall quality. Despite a drop in color saturation expressed by chroma values (varying from 59 to 46) was observed, color index presented a positive value for all samples (varying from 13 to 15) indicating orange color preservation throughout storage. This research develops a microbicidal aqueous paint to prevent infections on high-touch surfaces. Based on the experimental tests, two chemical formulations were proposed consisting of an acrylic latex resin, silicone resin, titanium oxide, zinc omazide, copper oxide nanoparticles and additives. SnO2 electrodes doped with Sb were prepared, supported on porous titanium sheets by impregnation, sintering and thermal decomposition of precursor solutions with different mass percentages of Sn and Sb (Sn: Sb = 9:1 and Sn: Sb = 7:3). The electrodes were coated with a layer of ß-PbO2 obtained by anodic electrodeposition method at 65 ° C and a current density of 30 mA cm-2, for 30 minutes. The electrodes were characterized by Raman spectroscopy, scanning electron microscopy, and cyclic voltammetry. Dark chocolate coatings contain a high percentage of cocoa, which is pleasing to the consumer’s taste. The aim of the research was to develop a bitter-type chocolate coating from the combination of CCN51 and super tree cocoa. In this study, an experimental method, with 18 treatments was applied. In the sensory analysis a hedonic scale test with 30 untrained judges and 15 trained ones was carried out, applying a completely random unifactorial design. The judges determined that T1 treatment with a content of 70% cocoa liquor, had a mean value of 3.8, while the value for the untrained judges was not significance. A bromatological analysis of the best treatment was made based on the NTE INEN 621:2010, resulting in moisture content of 37.86%, fat 9.26%, protein 2.04% and ash 99.38%, defatted cocoa dry extract 98.41%, dry extract of total cocoa and microbiological results less than 100 ufc.m...

El objetivo de estudio fue comparar el CHROMagar ESBL y el ChromoSelect agar ESBL para la detección de bacterias productoras de betalactamasas de espectro extendido aislado de muestras clínicas en Lima 2024. Materiales y Métodos: Esta investigación fue observacional y se desarrolló con 133 cepas de enterobacterias aisladas de urocultivo. Se siguieron recomendaciones de la guía CLSI M100-S24 para la detección de BLEE. Su comparó los resultados del cultivo bacteriológico de ChromoSelect agar ESBL versus CHROMagar ESBL mediante el análisis de las pruebas diagnósticas. La presente tesis aborda el análisis integral de los morteros usados para revestimiento, con énfasis en la evaluación de la factibilidad de implementar polvo de mármol en diferentes porcentajes (5%, 10% y 15%) en la mezcla, con el objetivo de mejorar su resistencia contra el salitre. En primer lugar, se procedió a realizar la caracterización del agregado fino mediante ensayos de contenido de humedad, peso unitario y granulometría, siguiendo la normativa correspondiente. At present, in vitro digestion models are increasingly used by industries such as food and pharmaceuticals, to evaluate the bioavailability of active compounds present and / or incorporated in food and pharmaceutical products. The aim of this work was to produce, by ionic gelation, pectin microparticles containing sacha inchi oil electrostatically coated with bovine blood proteins. Furthermore, its bioaccessibility was determined using in vitro gastrointestinal digestion. The results for the size and encapsulation efficiency of uncoated microparticles were 186.94 ± 12.63 ?m and 81.63 ± 2.62%, respectively. After coating, it was observed that coated microparticles with bovine blood decreased in size (166.37 ± 19.07 ?m).
