Beef aging is a process that involves the interaction of enzymes and chemical transformations that directly influence changes in flavor and texture, which in turn can determine the sensory experience for guests. The purpose of this study was to compare, in terms of texture, the aging of beef brisket cuts through two techniques: with animal fat coating and dry aging, over a period of 21 days, and to determine the acceptability of end consumers. The cuts were stored under controlled temperature and moisture conditions (2 °C and 60 % relative moisture, respectively), with continuous monitoring to ensure food safety. Finally, they were cut into 2 cm thick steaks, fried to medium doneness with salt, and sensorially evaluated by a panel of 27 individuals. It reviews the publications related with sexual maturity process and factors that, in some way, affect it. It studies a population of 1570 women from Lima and 189 from Arequipa, of different socioeconomic level, with ages from 12 to 48 years. The results allow the assertion that the socioeconomic level -that it is expressed in the nutritional state- is a fundamental factor in the sexual maturity process and the reproductive function. The secular trend to an earlier age of menarche has not yet arrived to the point expected due to the genetic factor. The results are compared with those of a north european women's population. It shows that moderate physical activity improves the reproductive function and that, to the present time, the age of menarche is earlier - or at least not lates- in Arequipa then in Lima City. This paper studies active ageing and its distribution among older adults in a sample of 18 Latin American countries. For this purpose, a multidimensional index of active ageing is estimated for each individual, as well as its distribution in each country. This strategy makes it possible to measure inequalities in the ageing process, and also to consider different value judgements in the overall assessment of well-being during ageing. Thus, the study sheds light on discrepancies in the quality of ageing within and between countries. Furthermore, individual factors associated with the degree of inequality in active ageing are analysed by means of regressions using Gini re-centred influence functions. Promoting health in old age involves the need for a person-centered vision that goes beyond the limits of geriatric syndromes or the stereotyped decline of the older adult. Introduction. In our country changes are taking place in the structure by age in the last decades, one of the most important is the increase of the older adult population. Objectives. To determine the perception of living a successful aging and identify some variables associated with this perception in the elderly teachers of the Faculty of Medicine, Universidad Nacional Mayor de San Marcos. Methods. Cross-sectional and correlational study. Sample of 106 older adult teachers selected for convenience, from september to november 2017. The Successful Aging Inventory of Meredith Troutman was used by the author. Results. The study aims to identify factors contributing to the development of critical thinking skills among opinion journalism students in a private university. The general goal of this research is to address the way in which the twenty-five first Spanish publishers in literature publication manage their social networks. For this, through the PRGS model, the weight of the main social networks (Facebook, Twitter and Instagram) in the digital marketing strategy of these Spanish publishing companies is analysed from a triple dimension: a) the attraction of users, b) content generation, and c) users' engagement to the brand. The study conducted on these twenty-five Spanish publishers concludes that Facebook is the one that generates the most fans, compared to Twitter and Instagram. Nonetheless, Twitter is the network most used to generate content. Finally, in terms of engagement, the results point out Instagram as the network where better results are obtained

The Article is dedicated to learn the impact of increasing cognitive activity in preschool children. 44 children aged 5-6 were selected for the research and the impact on the cognitive activity through didactic games with them were investigated. Different aspects manifested itself in development of cognitive processes, especially mentality during the comparison of methodologies used in conducting didactic games with children on the experimental and control groups in the research process. Unlike the control groups, the experimental groups were more likely to observe cognitive processes and tasks, and the tasks were performed more adequate by the experimental group. It is determined that organization of transforming didactic games into a leading activity in preschool preparation of children and trying to improve the activity of game increases the cognitive activity.
