Dado que todas las actividades logísticas de alimentos perecibles son claves para determinar el tiempo que cuesta ponerlo en el mercado y sus características físicas, se detalla la importancia de la cadena de frío aplicada a estos productos y cómo el control de temperatura es esencial para mantener la calidad e inocuidad del producto. Como parte del desarrollo del tema se explica la logística de perecibles que involucra almacenamiento y transporte y las consideraciones para mantener la calidad del producto en base a la normativa NTS 114-MINSA/DIGESA-V.01. Estas disposiciones generales de Higiene que permitirán complementar los cuidados al producto para mantener la calidad se fundamentan en la aplicación de las Buenas Prácticas de Almacenamiento (BPAL) y del Programa de Higiene y Saneamiento (PHS)The objective of this monographic work is to present the considerations to be taken into account during the storage and distribution of perishable food after its passage through the factory. Given that all perishable food logistics activities are key to determining the time it takes to put it on the market and its physical characteristics, it details the importance of the cold chain applied to these products and how temperature control is essential to maintain the quality and safety of the product. As part of the development of the subject, the perishable logistics that involves storage and transport and the considerations to maintain the quality of the product are explained on the NTS 114-MINSA / DIGESA-V.01 standard.
