La población estuvo conformada por 90 Restaurantes categorizados y no categorizados teniendo como fuente la GERCETUR – LORETO 2024, tamaño muestral por 18 restaurantes categorizados y no categorizados de la población se utilizó el 20% por no ser una población grande a quienes se les aplicó una encuesta y cuestionario, Los resultados muestran un crecimiento en el sector gastronómico en nuestra ciudad en los últimos años, la gastronomía generando oportunidades laborales, las preferencias gastronómicas y estrategias de marketing para atraer a los clientes prefieren todas las anteriores en su visita a un establecimiento. El estudio concluye que el concepto de desarrollo sostenible es una herramienta de gran importancia para los restaurantes quienes optan por prácticas de implementación responsable con el medio ambiente involucrando así a la sociedad en su conjunto para el desarrollo productivo de sus actividades respectivas para un flujo constante de la economía.

The type of research was descriptive and quantitative, nonexperimental and cross-sectional. The population consisted of 90 categorized and non-categorized restaurants with GERCETUR - LORETO 2024 as a source, sample size of 18 categorized and non-categorized restaurants, 20% of the population was used for not being a large population to whom a survey and questionnaire were applied. The results show a growth in the gastronomic sector in our city in recent years, gastronomy generating job opportunities, gastronomic preferences and marketing strategies to attract customers prefer all of the above in their visit to an establishment.
