The physicochemical properties (antioxidant activity, total polyphenols and tannins contents) of tara extracts have been obtained. Samples were taken from the pod of tara (powder, fiber, seed coat and the inside of the seed) by maceration and Soxhlet extraction. All extracts have high antioxidant activity with an IC50 between 10 and 121 µg/mL. The total polyphenol content varies between 40 and 150 mg GAE/g of sample and the tannins content varies between 22 and 80%.
Se han determinado las propiedades fisicoquímicas (actividad antioxidante, polifenoles totales y contenido de taninos) de extractos obtenidos por maceración y Soxhlet, de muestras obtenidas de la vaina de tara (polvo, fibra, cáscara de la semilla y la parte interna de la semilla). Todos los extractos obtenidos poseen alta actividad antioxidante, con un IC50 entre 10 y 121 µg/mL. El contenido de polifenoles totales varía entre 40 y 150 mg EAG/g de muestra y el contenido de taninos varía entre 22 y 80%.
