Flavonoids and more phenolic compounds when ingested are metabolized to phenolic acids, which are classified as benzoic, phenylacetic and cinnamic primarily, by “in vitro” methods (ABTS and FRAP), the antioxidant capacity of phenolic acids of potential metabolic interest was determined. The values vary by chemical reaction involved and the structure of the compounds, which influences the number of radicals, their position on the benzene ring relative to the carboxylic group and the chain length of the latter. In interactions between mixtures of acids a mainly antagonistic effect is observed, there is no structural pattern that explains it.

The mango, Mangifera indica L., is a tropical fruit that stands out for its particular flavor and aroma, is widely accepted. In this paper the effect of lyophilization on the pulp four mango varieties was evaluated: Chato, Pink, Meat and Suck. Bromatological chemical analysis by official methods (AOAC, FAO) and antioxidant capacity by DPPH before and after treatment was performed. No significant differences between varieties of mangos, except vitamin C (pink and meat ~ 50 % +) and carotenoids (Pink ~ 70 % +) was found; the processing affected the acidity with an increase of 250 %, a decrease of total carotenoids (27- 42 %) and antioxidant activity (~ 50 %).

Pisco grapes are 8 known varieties of Vitis vinifera from which pisco is obtained during the pisco production process, by-products such as seeds, skins and others are released from the fruit; the seeds are lately becoming especially important due to their high content of polyphenols and their antioxidant properties. There are several methods for obtaining extracts and in order to obtain extracts with the highest possible polyphenol content in this study, an ultrasonic bath with a solvent system ethanol: water: acetic acid (90/9.5/0.5) is used, which is then taken to dryness in a rotary evaporator. El presente trabajo está enmarcado en el estudio de rescatar y revalorar a las especies vegetales en peligro de extinción en la provincia de Ica y tuvo como objetivo determinar la actividad antioxidante, contenido de minerales y toxicidad aguda del extracto alcohólico tallos de Bulsenia retama Griseb Calato obtenido en el distrito de Yauca del Rosario del departamento de Ica. Se obtuvo el extracto por ultrasonido y luego se determinaeron los metabolitos secundarios por reacciones de precipitación y coloración; la actividad antioxidante por los métodos DPPH y FRAP; el contenido de minerales por absorción atómica y así mismo la toxicidad aguda a una dosis fija. Se efectuaron análisis químico completo a tres tubérculos: Oca (Oxalis tuberosa),Olluco (Ullucus tuberosus) y Mashua (tropaeolum tuberosum) al estado fresco, mediante métodos de la AOAC y la FAO, encontrándose los siguientes valores: Proteína 0.97%, 1.00%, 1.20%; grasa 0.80%, 0.0%, 0.2%; cenizas 0.57%, 0.52%, 0.70%, fibra 0.76%, 0.58%, 0.79 %; carbohidratos 13.16%, 12.58%, 10.95%, respectivamente. Se aisló el almidón de los tres tubérculos siendo el rendimiento de 12.85%, 5.05% y 2.20 % para la oca, olluco y mashua respectivamente; a los que se efectuó análisis químico proximal no encontrándose diferencias significativas entre ellos. The agricultural sector faces risks from damage caused by phytopathogens, and many farmers rely on synthetic fungicides to combat them. However, excessive use of these products pollutes the environment and promotes pathogen resistance. This study evaluated the mycelial growth inhibition of 57 plant extracts against Botrytis cinerea, Lasiodiplodia theobromae, and Fusarium sp., and their efficacy in controlling Erysiphe necator in the field. It also evaluated their phytotoxic effect on wheat seeds and the identification of metabolites present in the extracts. The most effective extracts were those of Ambrosia artemisiifolia, Conyza sumatrensis, Dysphania ambrosioides, Minthostachis mollis, Salvia sp., Pimpinella anisum, and Syzygium aromaticum. The Zea mays purple variety is a plant native to America that has purple grain and crown, thanks to the anthocyanins that are the pigments that give this color. The objective of this work was to analyze the influence of the various drying procedures of the purple maize carried out by the producers of the Ica valley, on the proximal chemical composition and the content of total anthocyanins. 5 drying procedures were applied, which were coded from T1 to T5 and the coronas and grains were analyzed separately; it is observed that the different treatments do not significantly affect the chemical composition of the crown or the grain; however, treatments 3 and 4 preserved a higher content of anthocyanins in the crown (1513 and 1516 mg / 100g), while treatment 2 preserved a higher content of anthocyanin in the grain (907,1 mg / 100g).

The objective of this study was to determine the antioxidant and antimicrobial activity of the ethanolic extract of the aerial parts of the Solanum radicans L.f. (huallpachaqui) from San Juan of Chacña, province of Aymaraes, department of Apurímac.
