El estudio sobre el efecto hidratante del Terrasel C plus en filetes de Alaska Pollock, en comparación con el método tradicional sin aditivos químicos, ha permitido determinar cómo mejorar el proceso para evitar obtener un producto seco con características que puedan afectar su aceptabilidad. El estudio evaluó rendimientos y variables de proceso, y propuso una alternativa de mejora. El proceso de curado se dividió en dos fases para evitar cualquier agente que pudiera afectar la calidad del producto, seguido por el secado en túneles para enfriamiento y empaque.
