Se evaluó el efecto de dos pretratamientos sobre la actividad antioxidante en el hidrolizado proteico de quinua, utilizando la extracción con CO2 supercrítico y etanol como cosolvente, este tipo de pretratamiento se comparó con un método convencional de extracción con éter de petróleo sin recuperación de compuestos bioactivos. Las extracciones se realizaron a una temperatura de 55°C y una presión de 23 MPa utilizando etanol (7-8 g de quinua/100 ml); el flujo de masa de CO2 fue de 35 g/min, el tiempo de extracción fue de 240 min, y el tamaño de partícula fue de 500 µm, se aplicó la enzima COROLASE® 7089 para la hidrólisis enzimática, finalmente la prueba ABTS evaluó la actividad antioxidante. Water contaminated by heavy metals is a risk to public health. This is the reason behind widespread research on water treatment oriented to removing metal ions. This research determined the intensity of adsorption of lead (Pb) by the Azolla caroliniana fern and its capacity to remove lead in synthetic waters. An atomic absorption spectrophotometer was used to determine the concentration of adsorbed lead. Langmuir isotherm graphs showed that the type of isothermal system was unfavorable for the four reactors used in the study (RL's greater than 1). On the other hand, Freundlich isotherm graphs showed the linear models of the kinetic behavior of lead adsorption by Azolla caroliniana for the four reactors and enabled us to determine that the best R2 and the highest adsorption intensity (n) of Pb (0,122) was achieved with reactor D (30 ppm Pb).

Mauritia flexuosa L.f. is a palm tree which presents great morphological variability (morphotypes), represented mainly by the mesocarp color of its fruits. The objective of the study was to characterize the physicochemical and antioxidant properties of three morphotypes of Mauritia flexuosa L.f. (Yellow, Colour and Shambo) of greater economic importance in the Peruvian Amazon. Shambo showed a significantly high content of bioactive compounds (total phenolics, flavonoids and carotenoids) and DPPH radical scavenging activity compared to the Yellow and Colour morphotypes (p <= 0.05). There was a significant correlation between DPPH radical scavenging activity and total phenolics, flavonoids and carotenoids (p <= 0.01). The world would not be as it is today without the Amazonia. It is home to the largest area of tropical rainforest where more than half of our planet’s animal, plant and insect species live. This immense green ocean plays a vital role in the regulation of the Earth’s climate, the purification of water, and the absorption of carbon. Peru is a country blessed by nature. Its largest and most biodiverse region is the Amazonia. According to the National Ministry of the Environment, the Amazonia covers, in its entirety, the departments of Loreto, Ucayali, and Madre de Dios; almost entirely, the departments of San Martín and Amazonas; very partially, the departments of Pasco, Junín, Huánuco and Cusco; and, finally, certain protected areas of Cajamarca, Puno and Ayacucho.
