La creciente población mundial demanda cada vez mayor cantidad de alimentos inocuos y nutritivos para mejorar las caracterÃsticas beneficiosas de los alimentos, se ha prestado especial atención en los últimos años a los productos germinados que es una alternativa para mejorar la calidad nutricional, siendo el objetivo evaluar las propiedades nutricionales del germinado de quinua (Chenopodium quinoa Willd) de la variedad pasankalla roja, para ello se evaluó la influencia de la temperatura (24 y 30°C), tiempo de remojo (8 y 12 horas) y tiempo de germinación (1, 2,y 3 dÃas) con respecto a las propiedades nutricionales, composición quÃmico proximal, contenido de aminoácidos (técnica de cromatografÃa liquida). Academic stress in university students associated with the COVID-19 pandemic is increasing due to the change from face-to-face to virtual education, causing decreased motivation and increased anxiety in students. The aim of this study is to evaluate academic stress in university students in the face of virtual education associated with COVID-19. To this end, the validated academic stress questionnaire SISCO SV- COVID-19 was applied, and 92.27% of the students surveyed had academic stress, identifying the overload of tasks and work to be completed within the deadlines set by teachers as a stress factor.

The presence of steroid hormones in lake waters causes contamination of aquatic ecosystems, which may cause endocrine alterations in the organisms that inhabit them. Moreover, many of these waters are purified and distributed to populations located around the lake; therefore, these effects could be repeated in humans who consume these waters. This study reports the presence of steroid hormone residues in the waters of the inner bay of Lake Titicaca and drinking water in the city of Puno-Perú. The Solid phase extraction method was used for sample preparation, and the analyses were developed in an HPLC-DAD system. Results show maximum concentrations of steroid hormones estrone (E1) 1.56, 17 β- estradiol (E2) 2.27, 17 α- ethinylestradiol (EE2) 13. 88 ng L-1 respectively.
