The mushroom Pleurotus ostreatus also called oyster mushroom is widely cultivated for its nutritional value, as well as, for its different health benefits and for its values in remediation. Laboratory N° 11 of the Universidad Nacional de Ingeniería of Peru is cultivating P. ostreatus making use of residues of coffee pulp as a substrate. The present work describes the identification of the major phytoconstituents in the apolar fractions of the organic crude extrac of oyster mushroom. After the transesterification of a fraction rich in fatty acids, the palmitic acid methyl ester was identified as the majority and of a second fraction were identified of the steroids 5α,8α-epidioxi-24(R)-metilcolesta-6en-3β-ol and 5α,8α-epidioxi-22E-ergosta-6,22-dien-3β-ol. Dracontium spruceanum (Schott) G.Zhu ex Dracontium loretense Krause es una planta nativa de la región amazónica y de centro américa, que recibe diversos nombres: Jergón sacha, Ronon rao (Shipibo-conibo), Hierba del jergón, Shano yora, Du un yubi (Cashinahua), Jararaca, Hierba de santa María, Taja de cobra, Fer de lance. Cuphea carthagenensis was selected by the Brazilian Ministry of Health (CEME Program 1984-1998) as a native source to develop phytomedicines for the public health service. The present work reports the isolation and identification of major ellagitannins and flavonoids present in the butanolic phase of the aqueous extract of the aerial parts of C. carthagenensis by semi-preparative High Perfomance Liquid Chromatography. The identification of the compounds was carried out by analysis of nuclear magnetic resonance spectrum and mass spectrometry. The well-defined ellagitannins were oenotein B (1), woodfordin C (3) and flavonoids were quercetin (8), and quercetin-3-O-β-D-glucuronopyranosideo (10). Jacaranda caroba is a tree native to Brazil, commonly used in Brazilian traditional medicine. Phytochemical study made with the chloroform residue obtained from 70% ethanol extract of the leaves led to the isolation and identification of pentacyclic triterpenes 3-epi-corosolic acid (1), 2α,3α,19α-trihydroxyurs-12-en-28-oic acid (2), 2α-hydroxyursolic acid (3), maslinic acid (4), 2α,3α,23-trihydroxyurs-12-en-28-oic acid (5), 2α,3α,23-trihydroxyolean-12-en-28- oic acid (6), 2α,3β,23-trihydroxyolean-12-en-28-oic acid (7), 2α,3α,24-trihydroxyurs-12-en- 28-oic acid (8) and 2α,3α,24-trihydroxyolean-12-en-28-oic acid (9), identified by literature comparison of their 1H-NMR and 13C-NMR.

This paper describes the phytochemical analysis of the lyophilized juice of the tubers from Ullucus tuberosus, native of the Andean region, which are used in Peruvian gastronomy. From organic solvents extraction and separation by transesterification of fatty acids and chromatography methods, the presence of palmitic acid methyl ester and stigmasterol and spinasterol steroids in the species under study were first identified, these compounds were identified by analysis of its nuclear magnetic resonance spectra hydrogen-1 and carbon-13.

The study present aims to investigate the influence of seasonal variation on chemical composition of the essential oil of the aerial parts of Nasa ranunculifolia, an ephemeral plant collected in La Libertad (LLacuabamba) at 4502 msnm. Thirty six compounds were identified, of which E-β-ionone, 2-Pentadecanone, phytol, n-octadecanol and the alkanes, n-tricosane, n-pentacosane, heptacosane and nonacosano are those are present the five months of collection.

The ephemeral shrub Ophryosporus peruvianus was collected for five months (December 2018 – April 2019) in Andahuaylallas (Cusco). The oil essential from leaves of the bush was obtained by hydrodistillation and analyzed by gas chromatography coupled to a mass spectrometer. Eigthy nine components of the essential oil were identified among oxygenated monoterpenes, sesquiterpenes hydrocarbons, sesquiternes oxygenated, oxygenated diterpenes, among others, of which the major components were the sesquiterpenes hydrocarbons β-caryophyllene, (Z)-β-Farnesene y β-Sesquiphellandrene and were presents in the samples of the five months of collection.

In the present work, the roots of Colignonia parviflora subsp. biumbellata, was acquired in the city of Chinchero at 3780 msnm. Twenty four chemical compounds were identified among methyl esters, monoterpenes, sesquiterpenes, phenylpropanoid and aliphatic alcohols in the root essential oil, the identification was through the comparasion of the mass spectra with the data bank of the CG-MS system (NIST 14) and by the analysis of their mass spectra obtained by gas chromatography coupled to a mass spectrometer. In the apolar phase of the root juice, its major fatty acids and secondary metabolites β-sitosterol, stigmasterol, stigmast- 7-en-3β-ol, stigmast-7,22-dien-3β-ol, methyl ester of ferulic acid and oleanic acid.

En este trabajo se ha realizado el estudio de la incidencia de los ácidos grasos y alcanos en las espinas, cáscara, pulpa y semillas del fruto del sanqui (Corryocactus brevistylus subsp. puquiensis). Para esto se obtuvieron los extractos hexánicos de cada parte del fruto, los cuales se transesterificaron para su posterior análisis por el método de cromatografía de gases acoplado a espectrómetro de masas. Para el estudio de ácidos grasos se encontró que los mayoritarios fueron: los ácidos araquídico y behénico en las espinas, los ácidos linoleico y palmítico en la cáscara y pulpa, y los ácidos linoleico y oleico en las semillas del fruto. En el caso de los alcanos los mayoritarios fueron: el nonacosano y hentriacontano en las espinas y cáscara, el pentacosano y tricosano en la pulpa. En las semillas no se identificaron alcanos.

Objective: To determine the inhibitory effect of the methanolic fraction of propolis from Oxapampa, Peru, on different genotypes of Streptococcus mutans in children diagnosed with caries. Materials and methods: 150 oral swab samples were collected, seeded for isolation of S. mutans and then identified by biochemical tests of carbohydrate fermentation, Api 20 Strep (bioMérieux) and conventional PCR. The 138 strains isolated and identified from patients and the S. mutans ATCC® 25175™ control were confronted with the methanolic fraction by the disk diffusion method, having as positive control 0.12% chlorhexidine and negative control Milli-Q water and DMSO (1:1).
