The functional compounds present in food are essential to prevent certain types of cancer, so it is important to know how they vary in the food during storage. The study was conducted in the Puno region in 2019; the objective of the trial was to evaluate the behavior of functional compounds in two accessions of Isaño: Yana añu (purple-dark color) and Yellow pumpkin with purple eyes during storage at natural conditions 13 ºC and 65 % of relative humidity. The method used to determine the polyphenols was the one described by Folin-Ciocalteu; ABTS to determine the CAOX and visual titration with 2-6 Dichlorophenolindophenol to quantify the vitamin C content. There are many varieties of native potatoes grown in different regions of Peru, usually for farmers´ consumption. However, the possibility of a commercial use has led this work in order to give them added value. To evaluate the possibility of use of native starch from these potatoes, as an ingredient in the food industry, it was presented as objective to determine the physicochemical, functional and viscoelastic native potato starches obtained from Pampacorral properties (Cuzco, Peru): Puka Ambrosio (PA), Combe (CO), Perwanita (PER), Kalis qero (KQ), Qello virondos (QEV), Yana churos (YACH), Pitikiña (PI), Yana kusi (YAKU) y Solischa (SOL). The purpose of this research was to determine the loss of function of the stomatognathic system in relation to the chewing capacity and aesthetic factor in students from 7 to 10 years old at the Independencia School - Puno 2022. Method, it is basic in scope, explanatory, quantitative, non-specific design. experimental, transversal. 186 children aged 7 to 10 years participated, whose oral cavity was examined in order to determine the number of lost teeth. Descriptive statistics and inference were used to corroborate the hypothesis. La presente investigación planteó como objetivo: Determinar la relación entre la pérdida dental y la función cognitiva en pacientes adultos de una Clínica docente, Lima 2024. Además, se aplicó una de las variantes del RS en el contexto de la reconfiguración de redes de distribución. Introduction: Hearing loss is a frequent occupational disease and causes deterioration in the quality of life of workers. Objetive: The objective was to identify the prevalence and factors associated with noise-induced hearing loss in workers of a metalworking company. Material and Methods: Analytical cross-sectional study. Data from occupational medical records were used to determine the frequency of hearing loss due to noise and its potential associated factors (age, sex, personal history). Simple and multiple regression models were constructed, estimating prevalence ratios (RP) using generalized linear models, Poisson family and log link function. Results: Of 1543 workers, the average age was 36.7 years and the majority were male (93.6%). Around a third of food is lost and wasted in the world each year, while close to 650 million people suffered from malnutrition before the pandemic. In Peru, 12.8 million tons of food end up being wasted every year. For that reason the food banks appeared, whose purpose is to deliver food to people in need thanks to the recovery of groceries that were going to be lost or wasted. The present research describes the operation of the Food Bank of Peru in its process of recovery and delivery food. Among the results found, the efficiency in the delivery of food stands out, thus saving resources, thanks to the application of cross docking, which allows to the organization to carry out their functions without the need of an own warehouse.
