The purpose of this study is to know the composition of the fractions of distillates wort for the production of Pisco, two of the main grape varieties for their manufacture: Torontel and broken. The analysis was performed by the method of gas chromatography to follow the standard technique for the analysis of Peruvian Pisco. We analyzed 24 of distillate fractions obtained from two grape must Torontel and shakes, obtained by natural fermentation.The grape shakes presents a greater concentration of higher alcohols that must of torontel, but lesser amount of esters that the latter. A framework for pricing Asian power options is developed when the underlying asset follows a jump-fraction process. The partial differential equation (PDE) in the fractional environment with jump is constructed for such option using general Itô's lemma and self-financing dynamic strategy. With the boundary condition an analytic formula for the option with geometric average starting at any time before maturity is derived by solving the PDE and the option with arithmetic average is evaluated in Monte Carlo simulation using control variate technique with the help of the above analytic solution. El objetivo de la investigación era utilizar una herramienta Lean Manufacturing, 5s y Kaizen para cumplir con los requisitos sanitarios para la fabricación de alimentos, la optimización de los tiempos del proceso de fraccionamiento de la glucosa y aumentar el número de unidades producidas. El tipo de investigación fue cuasi experimental, para lo cual se construyó una simulación del proceso con el uso del software Arena, que permitió evaluar los resultados de la de la propuesta de mejora. Se demostró que bajo un enfoque de mejora continua es posible reducir en promedio 6 minutos el tiempo de las actividades realizadas durante el proceso, así como aumentar de 11 a 19 unidades de producto final a comercializar. In this research work, it was evaluated the quality of the green anise (P. anisum L.) alcoholic distillate obtained by fractional distillation in a column of one, two and three plates; which is an intermediate product for the production of aniseed. The production process involved the mixture of schnapps and green anise grains for subsequent maceration. The macerated was distilled in a fractional column pot still. The evaluation methodology included organoleptic, physicochemical, spectroscopic (UV-visible) and chromatographic (TLC, HPLC and GC/ MS) analysis. Obtaining κ-carrageenan and λ-carrageenan is a function of the proper selection of algae, correct identification of the stages of life, control of parameters such as temperature, pH, time, concentration of solutions. The extraction process is based on: soluble in hot water and insolubility in polar organic solvents. Gametophyte phase is a starting point for the production of κ-carrageenan and phase sporophitic is geared to the production of λ - carrageenan. La obtención de κ -carragenano y λ -carragenano está en función de la selección adecuada de algas, identificación correcta de las fases de vida, control de parámetros como temperatura, pH, tiempo y concentración de soluciones. Para la construcción y comprensión del concepto de fracción de los estudiantes, se ha diseñado actividades a través de los constructos de la teoría APOS, haciendo la caracterización de sus esquemas en términos de niveles (Intra, Inter y Trans); todo ello desde el enfoque del construccionismo.
