This article presents a methodology that applies natural language processing and classification algorithms by using data mining techniques, and incorporating procedures for validation and verification of significance. This is conducted according to the analysis and selection of data and results based on quality statistical analysis, which guarantees the effectiveness percentage in knowledge construction. The analysis of computer incidents within an educational institution and a standardized database of historical computer incidents collected by the Service Desk area is used as case study. Para recopilar los datos de esta investigación se creó una Base de Datos Ventas, que a su vez fue la entrada para la creación del Datawarehouse DwhVentas. El método usado fue el inductivo. Se analizó el proceso de ventas, para lo cual se creó la tabla de hechos: factVentas, y se eligió como métrica: el importe de las ventas. Se realizó una revisión sistemática de literatura en las bases datos Science Direct, PubMed, SciELO, EBSCO host, Redalyc, ProQuest y Google Scholar, seguida de un metaanálisis para estimar la prevalencia combinada de Salmonella spp en canales de cerdos en plantas de beneficio del país. Se recopilaron 3007 artículos científicos, informes técnicos, trabajos de grado y presentaciones de reuniones técnicas publicados entre 2009 y 2020. Se retiraron aquellos que no cumplían con los criterios de inclusión. Se revisaron 51 estudios en detalle, seleccionando 11 documentos que se emplearon en el metaanálisis. The global consumption of ultra-processed foods (UPF) has experienced a rapid increase, particularly in developed urban environments. This trend has been associated with a rise in the prevalence of non-communicable diseases, suggesting potential risks to human health. Therefore, the study aimed to analyze trends and models of scientific production related to UPF and public health. To conduct the research, 139 documents were gathered from the Scopus database, using keywords such as "ultra-processed food" and "public health."
