Purple corn (Zea mays L.) is a superfood native to Peru, highly regarded for its functional properties and commonly used in the preparation of traditional beverages and desserts, such as chicha morada and mazamorra morada. Following processing, the corn cobs remaining as a byproduct retain significant amounts of bioactive compounds with potential for utilization. This study proposes their use as a primary component in the production of teas. To ensure product safety, the moisture content, total ash, and counts of enterobacteria and aflatoxins in the raw materials were first evaluated. The respiratory metabolism of fruits is affected by multiple internal (product) and external (environmental) factors that often interact with each other. Among the external factors that have the greatest influence on respiration are temperature, air composition, moisture content and illumination. The aim of this paper is to elucidate the influence of environmental factors on the respiration rate of peach fruits based on transfer models obtained by dynamic regression modelling (ARIMAX). The fitted ARIMA models met the criteria of parsimony and white noise in residuals. The estimated coefficients of each model were statistically significant under the Durbin-Watson (DW), Akaike (AIC) and Schwarz (SBC) criteria. Objective: The objective of this study was to demonstrate whether a gel formulation developed with collagen extracted from fish scales is stable, functional, and safe for cosmetic applications. Material and Methods: A gel formulation derived from fish scales was developed, and physicochemical parameters (pH, viscosity, protein, lipid, carbohydrate, ash, and moisture content) were analyzed following AOAC (Association of Official Analytical Chemists) methods. Additionally, microbiological aspects (mesophilic bacteria, coliforms, molds, yeasts, and Salmonella spp.) were evaluated, and a sensory test was conducted with consumers. Results: The results showed a pH of 6.8 and a viscosity of 150 cP, which are suitable for stability. Protein content was 25%, carbohydrates reached 60.2%, and lipids were 5.5%. La amazonia peruana enfrenta un elevado porcentaje de desnutrición infantil que requiere de manera urgente desarrollar, planificar y accederse en alimentos con alto valor nutricional que brinden nutrientes complementarios a la lactancia materna. Por tanto el presente trabajo de investigación tiene el objetivo de desenvolver una compota a base de Annona muricata (guanábana), Mauritia flexuosa (aguaje), Solanum sessiliflorum (cocona) y su capacidad antioxidante y su aceptabilidad como alimento complementario; para eso, se realizó un diseño completamente experimental aleatorizado con tres formulaciones y tres tratamientos térmicos aplicando un flujograma. El aceite de los granos de Amaranthus caudatus L. “Kiwicha” (Anexo Nº1), se extrajo por el método de Soxhlet y se evaluó: la seguridad cutánea y ocular in vivo aplicando los métodos “Acute Dermal Irritation/Corrosion” (OECD 404) y “Acute Eye Irritation/Corrosion” (OECD 405) de Guidelines for Testing of Chemicals; se determinaron las propiedades físico-químicas del aceite: peso específico, índice de refracción, índice de acidez, índice de saponificación, índice de peróxido, índice de yodo. Measurements at the high-elevation Lamar Observatory in the Mantaro Valley (MV) in the Central Andes of Peru demonstrate a diurnal cycle of precipitation characterized by convective rainfall during the afternoon and nighttime stratiform rainfall with embedded convection. Wet season data (2016-2018) reveal long-duration (6-12 hr) shallow precipitating systems (LDPS) that produced about 17% of monsoon rainfall in 2016 and 2018 associated with El Nino and La Nina, respectively. The LPDS fraction of monsoon rainfall doubles to 35% with weekly recurrence in 2017 under El Nino Costero (coastal) conditions. LDPS occur under favorable moisture conditions dictated by the South America (SA) Low-Level Jet (SALLJ) and Cold Air Intrusions (CAIs). Low-fat cheeses are characterized as having poor flavour, texture and functional properties due to the high moisture and protein content. Some strategies developed to improve these deficiencies include the use of adjunct cultures, use of fat replacers and processing techniques. The use of adjunct cultures (mainly Lactobacillus spp) can improve the functionality and flavour of low-fat cheeses. It is desirable to have cultures of low proteolytic activity, but of high peptidolytic activity (to avoid excessive acid formation and bitter flavours).
