description El transporte del ganado bovino hacia el matadero constituye todo manejo dado sobre el ganado desde el centro de producción hasta el matadero. En esta gran fase ocurren muchos factores que generan estrés en el ganado y ponen en peligro su bienestar. El estrés es el punto de inicio para obtener cortes y hematomas observables en la inspección ante mortem, disminuyendo así las ganancias del ganadero por decomiso en la inspección post mortem; además, le genera pérdida de clientes exigentes al matadero. Por consiguiente, este trabajo de investigación presenta una revisión de manejos sobre ganado durante el transporte hacia el matadero que han causado un impacto positivo sobre su bienestar y calidad de carne y señala qué tipo de manejos han generado estrés en el animal y graves contusiones en la canal, conllevando a una carne oscura, firme y seca (dark, firm and dry) DFD.
