Sumario:In the present work of investigation a system of control and acquisition of experimental data is presented, that operates through a microcontroller that allows to fix the temperature of operation in the drying chamber. With the equipment installed and the appropriate instrumentation, the macroscopic parameters for the drying of solids were fixed, such as the speed, temperature and relative humidity of the air or process flow that influence the drying time, producing its variation or change in the humidity of the product. to dry. The characteristic drying curves for the potato were obtained; the free humidity vs time and speed of drying vs free humidity and from the latter the experimental values were taken to determine the heat and mass transfer coefficients, as well as the diffusivities for both the constant and variable periods. The selection of the control variables was made: the input variable or manipulated (hot air flow), the output variable (process flow temperature), the disturbances in the system (ambient temperature and flow variation). From the software, the behavior curves of the temperature of the process flow were obtained and compared with the Set Point fixed by the microcontroller.
