El objetivo principal será identificar los parámetros educativos, técnicas arquitectónicas necesarias para conocer como diseñar una infraestructura adecuada que responda a las necesidades de extensión de la enseñanza, docencia e investigación y de acuerdo con los actuales estándares educativos, tratando la historia de la gastronomía peruana y del mundo; su formación, evolución, nutrición y bromatología, organización de la cocina, técnicas de bar y comedor, logística gastronómica y un gran bagaje cultural de insumos de nuestra tierra con la cocina, fusión molecular y minimalista. Promover desde el dominio de nuestras técnicas culinarias hasta la administración de restaurantes y negocios de comida rápida; trabajando en conjunto con otras especialidades como panadería y pastelería, servicio de mozo y bartender y así teniendo la oportunidad de explorar nuevos horizontes.

The main objective will be to identify the educational parameters, architectural techniques necessary to know how to design an adequate infrastructure that responds to the needs of teaching, research and extension of teaching in accordance with current educational standards, dealing with the history of Peruvian gastronomy and the world; its training, evolution, nutrition and food science, kitchen organization, bar and dining room techniques, gastronomic logistics and a great cultural background of inputs from our land with cuisine, molecular and minimalist fusion.
