For the start-up, the plant will be installed in Chiclayo in the region of Lambayeque due to the fact that it has the best supply and transport logistics conditions, which were determined by the Factor Ranking Method and the Confrontation Matrix. In addition, the analysis of production capacity was carried out, for which the annual processing capacity of all the machinery and processes involved in the production of the product was identified. Identifying what, in the heating operation, which is processed in the exhausting machine, a bottleneck is generated by having a lower processing capacity; for this reason, the installed capacity of the plant is 640 224 preserves per year. In addition, a thorough analysis was carried out in the engineering of the project with the aim of identifying and reducing risk factors with respect to industrial safety, mitigation of environmental impacts and implementation of a maintenance plan to maintain the sustainability of processes; engineering tools such as the risk assessment Matrix and the IPERC Matrix were used to identify the costs incurred for their implementation. Finally, all the costs and expenses to be incurred for the correct execution in the projected years were calculated, as well as the investment and income that are estimated, preparing with these monetary values the economic and financial statement for the purpose of analyzing their ratios. It was determined that the project is viable in its economic aspect by obtaining the economic NPV and financial NPV of S/. 599 008 and S/. 792 743, respectively. In addition, the economic IRR was estimated at 36 % and the financial IRR at 78 %. It was therefore concluded that the project is economically, financially, environmentally, technically, and socially viable.

It was therefore concluded that the project is economically, financially, environmentally, technically, and socially viable.Se sabe que a nivel mundial existe el problema de desnutrición, sobre todo en sectores donde existe población con escasos recursos económicos, por lo cual se plantea a través de este producto, mejorar la salud de las personas y promover el consumo de alimentos saludables; de esta manera se busca llegar inicialmente al consumidor de Lima Metropolitana. Para la puesta se instalará la planta en Chiclayo en la región de Lambayeque debido a que cuenta con las mejores condiciones de abastecimiento y logística de transporte; las cuales fueron determinadas por el método de Ranking de factores y la Matriz de enfrentamiento. En adición, se realizó el análisis de la capacidad de producción. Para ello se identificó la capacidad de procesamiento anual de todas las maquinarias y procesos inmersos en la elaboración del producto. Identificándose que, en la operación de calentado, la cual se procesa en la máquina exhausting, se genera un cuello de botella al tener una menor capacidad de procesamiento; por esto, la capacidad instalada de la planta es de 640 224 conservas al año. Por otra parte, se llevó un análisis exhaustivo en la ingeniería del proyecto con la finalidad de identificar y reducir los factores de riesgos respectos a la seguridad industrial, mitigación de los impactos ambientales y poner en marcha un plan de manteamiento para mantener la sostenibilidad de los procesos. Para ello se utilizó herramientas de ingeniería como la matriz de peligros y riesgos y la matriz IPERC identificando los costos incurridos para su puesta en marcha. Por último, se calculó todos los costos y gastos a incurrir para la correcta ejecución en los años proyectados como también la inversión e ingresos que se estiman; elaborando con estos valores monetarios el estado económico y financiero con la finalidad de analizar sus ratios. Se determinó que el proyecto es viable económicamente al obtener el VAN económico y VAN financiero de S/. 599 008 y S/. 792 743 respectivamente. En adición, se calculó que la TIR económica es de 36 % y la TIR financiera de 78 %.
