Sumario:It is known that the problem of malnutrition exists worldwide, especially in sectors where there are people with scarce economic resources, for which it is proposed through this product, improve health of people, and promote the consumption of healthy foods; in this way it seeks to reach the consumer of Metropolitan Lima. For the start-up, the plant will be installed in Chiclayo in the region of Lambayeque due to the fact that it has the best supply and transport logistics conditions, which were determined by the Factor Ranking Method and the Confrontation Matrix. In addition, the analysis of production capacity was carried out, for which the annual processing capacity of all the machinery and processes involved in the production of the product was identified. Identifying what, in the heating operation, which is processed in the exhausting machine, a bottleneck is generated by having a lower processing capacity; for this reason, the installed capacity of the plant is 640 224 preserves per year. In addition, a thorough analysis was carried out in the engineering of the project with the aim of identifying and reducing risk factors with respect to industrial safety, mitigation of environmental impacts and implementation of a maintenance plan to maintain the sustainability of processes; engineering tools such as the risk assessment Matrix and the IPERC Matrix were used to identify the costs incurred for their implementation. Finally, all the costs and expenses to be incurred for the correct execution in the projected years were calculated, as well as the investment and income that are estimated, preparing with these monetary values the economic and financial statement for the purpose of analyzing their ratios. It was determined that the project is viable in its economic aspect by obtaining the economic NPV and financial NPV of S/. 599 008 and S/. 792 743, respectively. In addition, the economic IRR was estimated at 36 % and the financial IRR at 78 %. It was therefore concluded that the project is economically, financially, environmentally, technically, and socially viable.
