Five treatments were formulated with different proportions of mango pulp and whey (T1: 90/10, T2: 70/30, T3: 50/50, T4: 30/70, and T5: 10/90, with two replicates per treatment. The bererages were inoculated with L. casei, and the pH was monitored every 48 hours for 14 days. Aprogessive decrease in pH from 5.0 - 6.0 to aproximately 4.0 was observed, demonstrating the viability and stability of the probiotic during storage. Regarding protein composition, treatment T5 reached 4.92 g/100 ml of protein, while treatments T1 througth T4 showed average values of 2.76 to 2.99 g/100ml. For sensory analysis, a satisfaction survey was administered to 70 panelists, who evaluated aroma, color, flavor, and sweetness. According to the results, treatment T2 was the most favored by the tasters.La desnutrición y la anemia infantil constituyen un serio problema de salud pública, lo que impulsa la búsqueda de alimentos enriquecidos con suplementos proteicos y vitamínicos que contribuyan a reducir esta problemática. En este contexto, se desarrolló la presente investigación con el objetivo de elaborar una bebida proteica, probiótica y energética a base de mango (Mangifera indica), lactosuero y Lactobacillus casei. Se formularon cinco tratamientos con diferentes proporciones de pulpa de mango y lactosuero (T1: 90/10, T2: 70/30, T3: 50/50, T4: 30/70 y T5: 10/90), aplicando dos repeticiones por tratamiento. Las bebidas fueron inoculadas con L. casei y se monitoreó el pH cada 48 horas durante 14 días. Se observó una disminución progresiva del pH de 5.0–6.0 hasta aproximadamente 4.0, evidenciando la viabilidad y estabilidad del probiótico durante el almacenamiento. En cuanto a la composición proteica, el tratamiento T5 alcanzó 4,92 g/100 mL de proteínas, mientras que los tratamientos T1 a T4 presentaron valores promedio de 2,76 a 2,99 g/100 mL. Para el análisis sensorial, se aplicó una ficha de satisfacción a 70 panelistas, quienes evaluaron olor, color, sabor y dulzor.
