In this so far unpublished interview, carried out on September 20, 2019 in the city of Huancayo, doctor Rodolfo Cerrón-Palomino (Ph D. in Linguistics, University of Illinois at Urbana-Champaign), with honorary doctorate from the National University of the Center of Peru, exposes his reflections on the social problems of the Quechua language and the constant segregation of its speakers. He provides us an account and reason, from an interdisciplinary approach, of the colonial history whose effects radiates up to the present, evidencing, in an absent State, official educational strategies and private ones that, buried and at the same time manifested, turn out to be symbolically violent, stigmatizing the practice and knowledge of the comunolects in the Mantaro valley. En el akshu tahtay, que es el segundo aporque de la papa, las canciones tradicionales que cantan las mujeres campesinas contienen significación sociocultural resultado de una yuxtaposición de elementos de la actividad campesina de cultivo de la papa durante el ciclo agrícola y el inicio de los carnavales al sur del valle del Mantaro. La interpretación musical de temas que las mujeres campesinas realizan, son canciones tradicionales anónimas en quechua huanca que, en el plano oral relatan la invitación al aporque de la papa. El presente artículo de revisión tiene por objetivo, exponer información esencial sobre la culinaria tradicional de las comunidades del valle del Mantaro y situarla en el contexto crítico contemporáneo. Para su desarrollo se desplegó una metodología de revisión bibliográfica de la etnografía local sobre cultura alimentaria; a través, de fichas bibliográficas de registro de datos extraídos. Asimismo, se cualificó como fuente primaria, documentos de divulgación local, que es el más preciso en detalles de valoración de este acervo. De la revisión, se concluyó que la diversidad culinaria, explicitada en técnicas y saberes tradicionales, fueron determinantes de la identidad de sus productores en el valle del Mantaro. También, que el registro etnográfico de 1928 a 1990 evidencia una cultura de la comida sublimada en los afanes de sus protagonistas.

The objective of this review article is to expose essential information about the traditional cuisine of the communities of the Mantaro Valley and place it in the contemporary critical context. For its development, a bibliographic review methodology of local ethnography on food culture was deployed; through bibliographic records of extracted data. Likewise, local disclosure documents were qualified as a primary source, which is the most precise in terms of valuation details of this heritage. From the analysis, we conclude that culinary diversity, explained in techniques and traditional knowledge, are determinants of the identity of its producers.
