Los desechos de alimentos dispuestos inadecuadamente generan contaminación del suelo, aire y agua, focos infecciosos de vectores, así como emisiones de CO2. El objetivo de esta investigación fue utilizar residuos de corona de piña como agente estructurante para evaluar la influencia de los espacios de aire libre inicial buscando favorecer la actividad microbiana y alcanzar un menor tiempo de estabilización del proceso de compostaje. La metodología consistió en evaluar un diseño de bloques completamente al azar de pilas de compostaje de 200 kg de residuos de papa, camote y zanahoria en una relación 1:1:1 en peso (TA), mezcladas con coronas de piña al 10% (TB) y 30% (TC) en peso. Se monitoreó los espacios de aire libre, la relación C/N final, la respiración microbiana, la temperatura, el pH, la conductividad eléctrica y la humedad, durante 105 días.
