Objetivo: Determinar la relación entre el estrés académico y la alimentación de los estudiantes del 1° y 3° año de Nutrición Humana de la Universidad Peruana Unión en el ciclo 2011-1. Metodología: El estudio es descriptivo, correlacional, prospectivo, de corte transversal con diseño no experimental. Los instrumentos empleados fueron el Inventario de Estrés Académico y el cuestionario de recordatorio de 24 horas. Resultados: El nivel de estrés académico de los estudiantes de 1° y 3° año de Nutrición Humana frente a las diferentes situaciones académicas en el ciclo 2011 es elevado, en el 1°año con una media de 2.59, y para el 3° año con una media de 2.8. Ambos valores se consideran elevados porque sobrepasan el promedio de 2.5. Objective: To determine the relationship between academic stress with the power of the students of 1st and 3rdyear of Human Nutrition at the Universidad Peruana Unión 2011-1 cycle. Methodology: The study is descriptive,correlational, prospective, cross-sectional nonexperimental design. The instruments used are the Academic Stressinventory and the questionnaire of 24 hours recall. Results: The level of students’ academic stress of 1 and Year 3Human Nutrition address the different academic situations in the 2011 cycle is high, first year with an average of2.59, and for the third year with an average of 2.8 . Objective: Determine the relationship of knowledge, attitudes and practices on hygiene and food handling of workers in the restaurants of Miraflores and Lurigancho-Chosica. Methodology: descriptive and correlational type. The sample consisted of 125 manipulators from Miraflores and 125 from Lurigancho-Chosica; The questionnaire on knowledge, attitudes and practices on hygiene and food handling was used. Results: The results showed that in Miraflores and Lurigancho Chosica 70.4% and 59.2% had high knowledge about hygiene and food handling, similarly, in both districts, very positive attitudes about hygiene and food handling were found in 94.4% and 93.6% respectively. In Miraflores, 97.6% of handlers present a high level of practices, while in Lurigancho Chosica the proportion is lower with 54.4%. Goal: To determine the relationship between the type of eating patterns and the prevalence of metabolic syndrome in adults of the Southeastern Peru. Materials and Methods: It was a quantitative, non-experimental, cross-sectional and correlational study. The sample wasselected by non-probabilistic sampling at the researcher’s convenience, according to inclusion and exclusion criteria, made up of 130 adults. Results: The prevalence of metabolic syndrome in the study population was 27%. A 62% had an omnivorous pattern, between western and Mediterranean, 39.2% had vegetarian food pattern, corresponding to lacto-ovo-vegetarian and vegan. There was a statistically significant relationship between dietary patterns and indicators of metabolic syndrome (p <0.05).
