Senna birostris, es una especie vegetal que crece en Cusco y de la cual se han encontrado investigaciones fitoquímicas y farmacológicas muy limitadas. Algunos estudios previos de otrasespecies relacionadas han confirmado que los extractos de sus hojas tienen actividad antibacteriana. Con el objetivo de determinar sus principales metabolitos secundarios ycuantificar los flavonoides totales presentes en sus hojas, se preparó un extracto hidroalcohólico al 96%. Asimismo, se evaluó su actividad antioxidante a través del ensayo de decoloración de 2,2-difenil-1-picrilhidracilo y su actividad antibacteriana frente a las cepas tipificadas de Escherichia coli, Staphylococcus aureus y Pseudomona aeruginosa. La contaminación por metales pesados es uno de los problemas ambientales más serios. El objetivo de la presente investigación fue, evaluar el proceso de bioadsorción de Pb (II) y Cd (II) usando como biomasa a E. coli aislada de las aguas contaminadas del Río Huatanay de la ciudad del Cusco. Se aislaron 07 cepas de enterobacterias, sólo 06 fueron identificadas usando el sistema microbiológico automatizado MicroScan WalkAway 96 plus, siendo éstas: cepa RHC-01=Acinetobacter iwoffi; cepa RHC-03=Proteus vulgaris; cepa RHC-04=Yersinia pseudotuberculosis; cepa RHC-05=Escherichia coli; cepa RHC-06=Escherichia coli; cepa RHC-07=Escherichia coli. Las 03 cepas de E. coli fueron sometidas a pruebas de resistencia a Pb (II) y Cd (II), siendo las cepas RHC-05 y RHC-06 las más resistentes a ambos metales. The objective of this work was to determine the best solvent for the extraction of anthocyaninsfrom the fruits of B. humbertiana and B. boliviana and to evaluate the pH, color, and antioxidant activity of the yogurts to which the lyophilized extract of both species was incorporated. For the extraction solvents allowed for food were used; ethanol and water acidified with citric acid. The 96% ethanolic extracts acidified with citric acid (pH 3.5) and freeze-dried of both berberis species were incorporated into commercial yogurt samples at the concentrations of 80 mg/50 g and 100 mg/50g of yogurt, determining that they maintain acid pH, achieve a coloration very similar to commercial yogurts with an overall color difference (ΔE) of less than 10 and have higher antioxidant activity.
