Introduction: The present study arises in response to the sustained increase in dengue outbreaks in Latin America, with special emphasis on the state of Zulia, Venezuela. This region, composed of 21 municipalities, is highly vulnerable to dengue transmission. Given this scenario, it is essential to have tools that allow early detection of outbreaks and, thus, optimize prevention and public health intervention strategies. La cosecha selectiva de café es esencial para asegurar la calidad de los granos, y se realiza de manera manual según la experiencia del recolector lo que exige tiempo y destreza. Para optimizar, se propuso determinar el estado de madurez del café en tres etapas (verde, pintón y maduro) mediante visión computacional, relacionándolo con su puntaje en taza. El análisis de color se realizó con el espacio CIELAB a partir de imágenes procesadas en un algoritmo implementado. Se tomaron muestras de 10 kg por cada estado de madurez y una muestra testigo, se realizó tres repeticiones en días aleatorios.
