The cooked meat products have a deficit of fiber, the main objective is to investigate nutritional and economic effects when replacing starch by chia flour in the mortadella, obtaining a contribution in dry "chia" basis of 23.79% proteins, 38.47% Crude fiber, 28.96% crude fat, 3.28% carbohydrates and 5.50% ash, demonstrating that chia is a complete and balanced food. For the preparation, several dosages were tested, the most significant being T3, which added 5% of chia flour, generating the following results: 33.71% in proteins, 5.27% in raw fiber, 52.59% in fat Crude, 0.02% in carbohydrates and 8.41% in ash, the raw fiber that increased from 0.07 in the control to 5,27 in the T3 treatment was highlighted. Los productos cárnicos cocidos tienen un déficit de fibra, el objetivo principal es investigar efectos nutricionales y económicos al sustituir fécula por harina de chía en la mortadela, obteniéndose un aporte en base seca “chía” de 23,79% proteínas, 38,47% fibra cruda, 28,96% grasa bruta, 3,28% hidratos de carbono y 5,50% cenizas, demostrando que la chía es un alimento completo y balanceado. Para la elaboración se ensayó varias dosificaciones, siendo la de mayor significancia T3 que adiciona un 5% de harina de chía, generando los siguientes resultados: 33,71% en proteínas, 5,27% en fibra cruda, 52,59% en grasa bruta, 0,02% en hidratos de carbono y 8,41% en cenizas, se destacó la fibra cruda que se incrementó desde 0,07 presente en el testigo a 5,27 en el tratamiento T3. The investigation arose from the need to identify whether the organizational climate in academics is favorable or not to carry out their academic activities; at which a methodology was developed to measure the organizational climate in the IES of the province of Chimborazo, using a survey validated by Chiang et al. (2008); a sample of 319 teachers; then the reliability of the instrument was determined by Cronbach's alpha coefficient (α = 0.914), the Exploratory Factor Analysis AFE (KOM = 0.962) in order to determine the validity of the construct of organizational climate was applied which led to a regrouping in four final dimensions: 1. At present there is an indiscriminate use in the meat industry of synthetic additives before which the present research proposes the use of pepper juice as an antioxidant and two types of gut; a completely randomized design was applied with 8 treatments and 3 replicates. The results of the physical chemical analysis determined that the best results were obtained in relation to the moisture, protein and fat contents when T3 (0.6%) of pepper juice was used and incorporated into synthetic gut. The organoleptic tests were performed with randomly chosen judges, who rated the samples on a total of 20 points, of which the best score obtained T3 (0.6%) with a score of 17.86 points, and the synthetic gut obtained 17.32 points On the natural one with 16.21 points. En la actualidad existe un uso indiscriminado en la industria cárnica de aditivos sintéticos ante lo cual en la presente investigación se propone el uso de jugo de pimiento como antioxidante y dos tipos de tripa; se aplicó un diseño completamente al azar con 8 tratamientos y 3 repeticiones. Los resultados del análisis físico químico determinaron que respecto al contenido de humedad, proteína y grasa se obtuvo los mejores resultados al utilizar el T3 (0,6 %) de jugo de pimiento y embutirlo en tripa sintética.
