The study of viscosity and texture in chocolates facilitates the generation of new important information for the production and development of this product, and thus avoid defects during processing, including the variety of cocoa beans used to make the chocolates. For this reason, the objective was to evaluate the rheological and textural behavior of dark chocolates made with Criollo and CCN-51 cocoa beans with the addition of lecithin. Dark chocolate bars were made with 70% of the two cocoa varieties and lecithin was added (0.2-0.4g/100g). The samples were tested for viscosity in a rheometer and texture (hardness) in a texturometer. Alkaline proteases are a physiologically and commercially important group, used primarily as detergent additives and food processing. The objective of this research was to isolate and select native Bacillus sp. Protease producers from compost of the Experimental Station of Applied Biochemistry, National University of Trujillo, Perú. For this purpose, compost was collected as a sample, enriched with a 1% casein solution, and a thermal treatment (80 °C for 15 minutes). To isolate the native Bacillus, serial dilutions were made, and 0.1 mL per surface were plated on Casein Agar plates and incubated at 37 ° C for 24 to 48 hours. El presente estudio tiene como objetivo determinar la factibilidad económica, financiera, social y de mercado para una planta procesadora de bolitas de chocolate orgánico al 65% (bitter) de cacao, rellena de frutos del bosque (arándanos y frambuesas). Se busca satisfacer a personas mayores de 18 años de niveles socioeconómicos A y B en el mercado de Lima Metropolitana. Se obtuvo una demanda del proyecto para el primer año de 978 049 bolsitas de 100g (97,8 t). El producto será distribuido a diversos supermercados para su posterior venta al cliente final.
