| Sumario: | Trees native to the tropics produce a diversity of fruits, which are rich in phytonutrients (PTN), are often used for juicing and are also used in the production of jams, jellies and canned preserves. However, millions of tonnes of fruit waste are produced worldwide every year. Among them, especially fruit peels are often discarded as waste. The objective of the research was to analyse fruit peels with major applications in agribusiness, and the specific objectives were; to classify the works in various lines of research by categorising relevant studies according to the specific research areas and to identify the most used fruits in research experiments that have used fruit peels as material. This article was carried out by means of a literature review, where the Scopus database was used to search for engineering-related publications. It was found that the most used applications of fruit peels in the agroindustry were: the elaboration of packaging films, the source of physicochemical compounds and natural preservative were the applications with the greatest uses, with 7, 4 and 3 uses in different articles respectively. It is concluded that the shells are used in different research fields, such as food science and technology, biotechnology and agro-industrial waste valorisation. This highlights the great field of interest and use of fruit residues, offering a comprehensive view and being a valuable tool for researchers to provide an economical recycling of these residues |
