Sumario:Foods for human consumption are those that meet the health quality and safety criterio established by the health standard. This research was carried out to determine the bacteriological quality of fresh vegetables for raw consumption that are sold in the markets of the city of Iquitos, from 60 samples collected from the Belén, Modelo and Secada markets, through the use of quantitative and qualitative techniques for the identification of bacteria. The presence of Escherichia coli detected in 47 samples analyzed, of which 19 were detected in Coriandrum sativum “coriander”, 18 in Lactuca sativa “lecttuce” and 10 in Cucumis sativus “cucumber”. Regarding mesophilic aerobes, they exceeded the maximum permissible limits of the sanitary standard, while Salmonella sp was detected in 4 samples of Coriandrum sativum “cilantro”, 8 in Lactuca sativa “lettuce” and 1 in Cucumis sativus “cucumber”. Concluding that the fresh vegetables sold in the Belén, Modelo and Secada markets do not meet the bacteriological criteria of sanitary quality and safety for food and beverages for human consumption.
