Departamento Académico de Ingeniería de Alimentos y Productos AgropecuariosLa toxicología es una ciencia bastante explorada, pero muchas veces esta es dirigida a venenos o compuestos extraños que pueden hacernos daño al exponernos, inhalarlos o ingerirlos; sin embargo, los alimentos del día a día también pueden causar efectos deletéreos en nosotros. Esta investigación busca en primer lugar brindarnos la base sobre los conceptos elementales de la toxicología para luego explorar los distintos insumos responsables del sabor (edulcorantes y sales), conservación y apariencia de los alimentos y así, a través de las distintas combinaciones de estos, dar origen a nuevos productos que durante un consumo desmedido puede traer consecuencias completamente opuestas a las deseadas. Concluyendo, se debe saber bien los distintos insumos que componen nuestros alimentos, conociendo su DL50 y condiciones exactas de uso, así como sus posibles sucedáneos naturales para evitar su abuso.Toxicology is a well-explored science, but many times it is oriented towards poisons or foreign compounds that could hurt us when inhaled, ingested, or when exposed to them; however, everyday food can also cause deleterious effects for us. This research looks to, first, provide us with the basics on the elementary concepts of toxicology, to then explore the different supplies which are responsible for the flavor (sweeteners and salts), conservation and appearance of the food, and thus, through different combinations of them, create new products which -through excessive consumption can bring consequences completely opposite the desired ones.
