Departamento Académico de FitotecniaEsta monografía presenta la experiencia profesional desarrollada en una empresa agroindustrial ubicada en el Centro Poblado Rinconada perteneciente al Distrito de Caraz, Provincia de Huaylas - Departamento de Ancash, donde se ejecutó un proyecto de 80 hectáreas de arándanos (Vaccinium corymbosum L.) ‘Emerald’ en contenedores. Teniendo en cuenta que uno de los requisitos solicitados por el mercado internacional y que se ha convertido en algo implícito en las especificaciones de un producto para exportación, es la certificación GLOBALG.A.P. basada en los principios de las buenas prácticas agrícolas, se determinó la implementación de este estándar de calidad e inocuidad alimentaria. Para lo cual, en el predio se realizó una auditoría interna basada en inspección visual, documentaria y entrevistas haciendo uso de la lista de verificación de la normativa en su versión 5.3-GFS (conformado por obligaciones mayores, menores y recomendados); dando como resultado que el porcentaje de cumplimiento del sitio por obligaciones mayores, menores y recomendadas, fuera de 91, 91 y 80 % respectivamente. Se decidió subsanar todas las obligaciones mayores y menores incumplidas, y no se absolvieron los requisitos recomendados, por tanto, se realizó el análisis de causa raíz haciendo uso de la técnica denominada “5 ¿por qué?” para cada incumplimiento, determinando el verdadero origen de cada problema y su estrategia de solución. El presente trabajo no incluye los requisitos de la norma referente a la planta procesadora o packing. La experiencia desarrollada permitió la obtención de la certificación GLOBALG.A.P. otorgándole a la empresa la posibilidad de demostrar a sus clientes que están produciendo un producto de calidad, inocuo y trazable, asimismo insertarla al mercado global, como un productor capaz de satisfacer las exigencias actuales de los consumidores de frutas a nivel mundial.This monograph presents the professional experience performed in an agribusiness located in the Rinconada population center belonging to the Caraz district, Huaylas province - Ancash department, where a project of 80 hectares of blueberries (Vaccinium corymbosum L.) 'Emerald' in pots was carried out. Taking into account that one of the requirements requested by international market and that has become an implicit specification of a product for export, is the GLOBALG.A.P. certification based on the principles of good agricultural practices; the implementation of this food quality and safety standard was determined. An internal audit based on visual and documentary inspection and interviews was carried out at the farm, using the checklist of GLOBALG.A.P. version 5.3-GFS (consisting of major, minor and recommended obligations); resulting in the percentage of compliance of the site for major, minor and recommended obligations, was 91, 91 and 80% respectively. All major and minor unfulfilled obligations were remedied, and the recommended requirements weren't resolved, therefore, the root cause analysis was performed using the technique called "5 whys" for each non-compliance, determining the origin of each problem and its solution strategy. This work doesn't include control points and compliance criteria related to packing.
