Maestría en AgronegociosLa presente investigación tuvo como objetivo general, estudiar los factores de calidad influyentes (física, sensorial y química) y su relación con el desempeño exportador del cacao blanco de Piura de la Cooperativa Agraria Approcap Ltda. Para dar cumplimiento al objetivo planteado se diseñó una investigación no experimental descriptiva correlacional haciendo uso de las técnicas de recolección de datos: observación directa, encuesta, análisis documental y pruebas de Catación. El estudio consideró como población objetivo a la actividad exportadora total existente de la Cooperativa Agraria Approcap Ltda., centrándose en su conjunto de data documentada referente a los factores de la calidad física, química y sensorial del cacao de la organización; muestreado desde el año 2019 hasta el mes de marzo del año 2023. Los resultados revelaron la clara existencia de una correlación inversa muy fuerte además de ser significativa con un 95 por ciento de confianza; en los factores de la calidad física: “índice de grano” y “porcentaje de fermentación”, comparados con el “número de toneladas exportadas” y el “valor FOB”, ambos para un cacao de tipo tipo convencional. Asimismo, se identificó diferencias significativas en los factores de la calidad de sensorial: "Acidez Mineral/Butírica”, “Vegetal total” y “Terroso/Hongo/Musgo/Bosque” con un 95 por ciento de confianza entre dos muestras con desempeños exportadores distintos; mientras que con lo que respecta al resto de los factores estudiados, no se evidenció ningún tipo de correlación significativa existente entre ellos. La investigación concluye recomendando estrategias resilientes y de diferenciación de los cacaos finos de aroma; que destacan la importancia de desarrollar capacidades para contribuir a reforzar el concepto de calidad integral del cacao en los actores de la cadena.The general objective of this research was to study the influential quality factors (physical, sensory and chemical) and their relationship with the export performance of white cocoa from Piura of the Cooperativa Agraria Approcap Ltda. To achieve the stated objective, a non-experimental descriptive correlational research was designed using data collection techniques: direct observation, survey, documentary analysis and cupping tests.The study considered the total existing export activity of the Cooperativa Agraria Approcap Ltda as the target population, focusing on documented data referring to the physical, chemical and sensory quality factors of the organization's cocoa. It was sampled from 2019 to March 2023.The findings revealed a significant and strong inverse correlation at a 95 percent confidence level between the physical quality factors: “bean index” and “fermentation percentage” compared with the “number of tons exported” and the “FOB value”, both for a conventional type cocoa. Additionally, significant differences were identified in the sensory quality factors: “Mineral/Butyric Acidity”, “Total Vegetable” and “Earthy/Mushroom/Moss/Forest” with 95 percent confidence between two samples with different export performances; while with respect to the rest of the variables, no type of significant relevance between them is evident.
