Sumario:Currently, the agribusiness is developing healthier products with a long shelf life. This is where the application of essential oils (EO) obtained from aromatic herbs gains greater strength, since these products can be used as edible coatings, antimicrobial agents, antioxidants in foods, flavorings and flavorings. The objective of this systematic review is to collect information about the agroindustrial interest in bioactive compounds and the antioxidant capacity of aromatic plants, in order to expand the readers' panorama about the use of essential oils in Agroindustry. Therefore, scientific literature from 3 databases was reviewed: Scielo, Scopus and Sciencedirect, and key words were defined such as: “essential oil”; "aromatic herbs"; “bioactive compounds”, “antioxidant capacity” and “phenolic monoterpenes”, the language (English and Spanish) and the years of publication (2018 to 2023) were also identified. The methodology used was the PRISMA system, which helped develop a checklist and a flow diagram, which allowed selecting articles with outstanding, exquisite, filtered and precise information. Therefore, at the end of the literature selection, only 25 articles were chosen, which provide relevant and current information. Regarding the subject of review, it is concluded that EO receive constant surveillance for possessing different bioactive compounds, antimicrobial activity and antioxidant capacity, which make them highly coveted in the Agroindustrial sector.
