It was concluded that the most relevant socioeconomic factors are: age with an OR of 2.045 being people over 35 years of age, the level of education with an OR of 2.555 where the majority only finishes secondary school, occupation with an OR of 1.958 people. that are only dedicated to their entrepreneurship, the income with an OR of 2.072 that registers an income of 3001ª 4000 and the expense with an OR of 1.940 destined mainly to salaries and supplies. Therefore, according to the author Cohen (1988), if the OR is less than 1.68, it is considered insignificant; If it is greater than 1.68, significant, in that sense the aforementioned indicators are those that allow determining the informality of the gastronomic activity of the restaurants in the Lucre district.

Therefore, according to the author Cohen (1988), if the OR is less than 1.68, it is considered insignificant; If it is greater than 1.68, significant, in that sense the aforementioned indicators are those that allow determining the informality of the gastronomic activity of the restaurants in the Lucre district.El presente estudio titulado “Factores socioeconómicos determinantes en la informalidad de la actividad gastronómica, Distrito de Lucre, Quispicanchis - Cusco, 2022”, tuvo como objetivo general: Describir los factores socioeconómicos determinantes en la informalidad de la actividad gastronómica del distrito de Lucre, Quispicanchis – Cusco, 2022, la metodología comprende el tipo de investigación siendo esta básica, alcance de investigación descriptivo, con un enfoque cuantitativo y diseño no experimental, teniendo como muestra a 52 personas propietarias de las diferentes “piscigranjas” a quienes se les aplicó un cuestionario. Se llegó a la conclusión que los factores socioeconómicos más relevantes son: la edad con OR de 2,045 siendo personas mayores de 35 años, el nivel de educación con OR de 2,555 donde la mayoría solo termino la secundaria, la ocupación con un OR de 1,958 personas que solo se dedican a su emprendimiento, el ingreso con un OR de 2,072 que registran un ingreso de 3001ª 4000 y el gasto con un OR de 1,940 destinado principalmente a salarios e insumos.
