Sumario:The present study titled “Determining socioeconomic factors in the informality of gastronomic activity, Lucre District, Quispicanchis - Cusco, 2022”, had as its general objective: Describe the determining socioeconomic factors in the informality of gastronomic activity in the Lucre district, Quispicanchis . – Cusco, 2022, the methodology includes the type of research being basic, descriptive research scope, with a quantitative approach and non-experimental design, having as a sample 52 people who own the different “fish farms” to whom a questionnaire was applied . It was concluded that the most relevant socioeconomic factors are: age with an OR of 2.045 being people over 35 years of age, the level of education with an OR of 2.555 where the majority only finishes secondary school, occupation with an OR of 1.958 people. that are only dedicated to their entrepreneurship, the income with an OR of 2.072 that registers an income of 3001ª 4000 and the expense with an OR of 1.940 destined mainly to salaries and supplies. Therefore, according to the author Cohen (1988), if the OR is less than 1.68, it is considered insignificant; If it is greater than 1.68, significant, in that sense the aforementioned indicators are those that allow determining the informality of the gastronomic activity of the restaurants in the Lucre district.
