Debido a los contagios masivos y lo incontrolable de la enfermedad, se implementaron normas de parte del gobierno, y el proceso de ajuste a los protocolos para atención al público tomó su tiempo, afectando el progreso de los negocios en este rubro. El presente estudio aborda esta problemática con el objetivo de identificar los factores más determinantes para impulsar el desarrollo y crecimiento del sector restaurantes, en una etapa que algunos denominan nueva normalidad. Para tal efecto, se realiza una recopilación de documentos relacionados con la temática y se efectúan dos rondas de entrevistas abiertas con la participación de siete expertos en el tema. Posteriormente, se identificaron los factores que fueron jerarquizados en cuanto a su nivel de motricidad y dependencia en una matriz de impactos con ayuda del software MICMAC (Matrix of Cross Impacts Multiplication Applied to a Classification). En los hallazgos del estudio se encuentra que los factores más influyentes del sistema son el cumplimiento de los protocolos exigidos, reforzar el servicio delivery y la capacitación en temas de higiene y desinfección. Estos resultados sirven de base para la planeación de posibles escenarios conducentes al desarrollo futuro del sector, así como a estrategias locales y transferibles a otros contextos de la región.

Due to the massive contagions and the uncontrollable nature of the disease, government regulations were implemented, and the process of adjusting to the protocols for serving the public took time, affecting the progress of businesses in this area. This study focuses on this problem with the objective of identifying the most determining factors to promote the development and growth of the restaurant sector, in a stage that some call the new normality. To this end, a compilation of documents related to the subject was carried out and two rounds of open interviews were conducted with the participation of seven experts on the subject. Thereafter, the factors were identified and ranked according to their level of mobility and dependence in a matrix of impacts with the help of MICMAC software (Matrix of Cross Impacts Multiplication Applied to a Classification). The findings of the study show that the most influential factors of the system are compliance with the required protocols, reinforcement of the delivery service and training in hygiene and disinfection.
