The slaughter stages (conduction, subjection, shoot down and bleeding) were related with the behavioral indicators of animal welfare (blows, tail twists, operator shouts, slips, falls, vocalizations, attempts to incorporate, punctures to pull down, total punctures, times of each stage and time between pull down and bleeding). The physicochemical properties in the Longissimus dorsi muscle between the fifth and seventh ribs were evaluated. The results indicated that shoot down was the most critical stage of the slaughter due to the greater occurrence of indicator events. There were no differences between pH0, pH1 and pH24 between groups (p<0.05); however, there were differences in drip losses according to breed group. The number of blows, tail twists, operator shouts, slips, falls, punctures to the pull down, vocalizations, attempts of incorporation and total punctures were related to the time of each stage of the slaughter (p<0.05). On the other hand, only pH0 was related to pH1 (R = 0.44, R2 = 0.19), where the regression equations had correlation coefficients and determination of medium to low (p<0.05). In conclusion, there is a significant correlation of medium to low between the behavioral indicators and the physicochemical properties of the beef, which can be predicted by such behavioral indicators by means of regression equations with correlation coefficients and determination of similar value. El estudio se desarrolló en el Centro de Beneficio Municipal de Chachapoyas, Amazonas, Perú, entre enero y octubre del 2017, con el objetivo de determinar la correlación entre los indicadores conductuales de bienestar animal durante el faenado y las propiedades fisicoquímicas de la carne. Se trabajó con 99 bovinos clasificados por sexo, edad y grupo racial. Se relacionó las etapas de faenado (conducción, sujeción, derribo y desangrado) con los indicadores conductuales de bienestar animal (golpes, torceduras de cola, gritos del operario, resbalones, caídas, vocalizaciones, intentos de incorporación, puntillazos al derribo, puntillazos totales, tiempos de cada etapa y tiempo entre derribo y desangrado). Se evaluaron las propiedades fisicoquímicas en el músculo Longissimus dorsi entre la quinta y séptima costilla. Los resultados indican que el derribo fue la etapa más crítica del sacrificio por la mayor ocurrencia de eventos de los indicadores. No hubo diferencias entre pH0, pH1 y pH24 entre grupos; sin embargo, hubo diferencias de las pérdidas por goteo según grupo racial (p<0.05). El número de golpes, torceduras de cola, gritos del operario, resbalones, caídas, puntillazos al derribo, vocalizaciones, intentos de incorporación y puntillazos totales están relacionados al tiempo de cada etapa del sacrificio. (p<0.05) Por otro lado, solo el pH0 estuvo relacionado con el pH1 (R=0.44, R2=0.19), donde las ecuaciones de regresión tuvieron coeficientes de correlación y determinación de medio a bajo (p<0.05).
