Evalúa el turismo alternativo que se desarrolla en la zona rural del distrito de Pachacámac y su posibilidad de plantearlo como impulsor del desarrollo sostenible de la zona. Se construyeron dos encuestas, una para ser respondida por los excursionistas que van a practicar los fines de semana, deportes de cicloturismo y trekking; la otra dirigida a los pobladores de la zona. Asimismo se estructuró un formato de entrevista a las autoridades de la municipalidad. Tanto las encuestas como la entrevista se propusieron conocer el perfil del excursionista y de los pobladores, conocer las necesidades que ambos grupos tienen, indagar sobre la percepción que tienen de la zona, de las rutas para practicar los deportes de aventura, de las consecuencias que genera el creciente número de excursionistas, del papel que cumple la municipalidad y las posibilidades que existen para desarrollar el turis...

The present article analyses the crucial role of disruptive strategies in the survival and adaptation of the gastronomic industry during the COVID-19 pandemic. Through qualitative research based on in-depth interviews with entrepreneurs and gastronomic managers, expected trends and practices were identified, reflecting a proactive and adaptable approach to crisis management. The results revealed various innovative strategies, from personalised delivery services to product diversification and strategic collaboration with other establishments. Rapid adaptation to new market conditions, effective risk management, and active pursuit of strategic partnerships emerged as critical elements for business resilience. During and as a consequence of the pandemic, the world experienced significant structural changes. Various productive sectors had to restructure many of their processes to survive. Among these, the gastronomic industry was severely affected by multiple restrictions, changes in its internal production and business dynamics, and safety regulations, among other factors. Many of these businesses went bankrupt, while others managed to reinvent themselves, building resilience to adapt to new, previously unknown circumstances. This review aimed to analyse studies on the strength of restaurant businesses in Latin America. The PRISMA method was employed, using the following databases: Scopus, WOS, Dialnet, SciELO, ProQuest, EBSCO, Redalyc, Emerald, ERIC and Google Scholar.
