The aim of this work of investigation was to determine the chemical composition (mike and macro nutrients) in the ripe fruit of Cyphomandra betacea "berenjena". The composition of Macronutrients, Ca, Fe, P and C vitamin; also liposolubles vitamins were identified in the edible part ripe fruit of Cyphomandra betacea “Berenjena”. The results were moisture 89,0%, extract dry 11,0%, ash 1,0%, acidity (expressed in lactic acid) 3,3, pH 3,6, totals carbohydrates 5,7%, totals solubles carbohydrates 4,8%, totals reductors solubles carbohydrates 2,7%, insolubles carbohydrates 0,9%, not reductors carbohydrates 2,0%, fiber 1,8%, totals proteins 1,7%, fat 0.1%, calcium 23,7mg, iron 0,6mg y phosphorous 12,0mg, C vitamin 7,5mg and contain A and E vitamin.
