Maestría en AgronegociosEl presente estudio se realizó en el distrito de Yarinacocha, provincia de Cayería, departamento de Ucayali entre 2007-2010, participaron productores de camu camu (Ucayali) y comensales de comedores populares (Lima), los parámetros fueron evolución del precio en chacra, rentabilidades esperadas, cantidades ofertadas y demandadas. El propósito fue evaluar un sistema de comercialización del camu camu desde Ucayali hacia Lima como una opción de agronegocios con la introducción del camu camu en los hábitos alimenticios de los comensales involucrados. Fue necesario analizar si existe aceptación del producto camu camu bajo la forma de refresco, luego se determinó la demanda potencial en los comedores populares seleccionados, se calculó la oferta potencial de camu camu y finalmente en la comercialización a realizar se analizó la rentabilidad para los productores y para los comedores populares involucrados. El presente estudio se justificó por que posee utilidad práctica, relevancia social por los beneficios económicos y sociales que genera. El estudio se sustenta en la teoría de la comercialización y seguridad alimentaria. El trabajo es de tipo exploratorio y explicativo con un exhaustivo trabajo de campo. Se aplicaron entrevistas y encuestas primero a un focus group de 10 comensales y finalmente a un tamaño de muestra de 65 ajustado estadísticamente. El nivel de confianza fue de 95% y el error de estimación de 5%. Las conclusiones fueron la aceptación del producto camu camu por la población demandante en estudio, la demanda a requerir fue del 4% de la producción en Yarinacocha, los ingresos para los productores son de 18 664 soles anuales y las utilidades económicas de 15 218 soles anuales. The intention was to evaluate a system of commercialization of the camu camu from Ucayali to Lima as a business option of agronegocios with the introduction of the camu camu in the food habits of the involved retainers, it was necessary to analyze if acceptance of the product camu camu as a drink, then the potential demand was determined in the selected dining rooms, the potential offer of camu camu was calculated and finally in the said commercialization, the profitability was analyzed for the producers and for the involved dining rooms. The present study justified itself because it possesses practical usefulness, social relevancy for the economic and social benefits that it generates. The study is sustained in the theory of the commercialization and food safety. The work is of exploratory and explanatory type with an exhaustive fieldwork. Interviews and survers were applied first to a focus group of 10 retainers and finally to a sample size of 65 fitted statistically. The confidence level was 95 % the estimation error of 5 %.
