The study was performed in order to identify the feasibility of operating a demonstration module production seed Nile tilapia in La Libertad. They told rearing tanks with aeration system and water recirculation supplemented with probiotic administration. The objective of this study was to evaluate the elaboration of a salami that contains a natural colorant extracted from the seeds of ayrampo (Opuntia soehrensii), using an extract of this natural product at different concentration levels and using microbiological and sensorial characteristics as acceptance criteria of the final product. Initially, a physicochemical characterization of the seeds was carried out, which showed the high nutritional value of this natural product and its antioxidant power. In an experiment aimed at determining the effect of the concentration of the ayrampo seed extract on the quality of salami, it was shown that for extract concentrations between 150 and 250 g / L of water in the meat mass, there are no significant differences in terms of the characteristics of smell, color, taste and appearance of the final product. RESUMEN Capsicum chinensis L. conocido como ―Aji Panca‖ es útil por sus propiedades pungentes y aromáticas; en seco se le utiliza, como base para las salsas y pastas, estimulante digestivo, sazonador y como antioxidante en carnes y otros; lo que demuestra ser un recurso de amplísimo rango de aprovechamiento para su industrialización y menor pérdida con relación al fruto fresco. La experiencia se inició con la siembra de semillas en macetas con tierra preparada y musgo. A los 25 días se introdujo dos pedazos de hojas jóvenes en medio basal (MS) con 2,4 –D a 1ppm y 0.5 ppm. Los callos obtenidos fueron traspasados a un nuevo medio suplementado con 2,4-D y BAP. Los resultados muestran que los callos embriogénicos se desarrollaron mejor en 1 ppm de 2,4 –D con un 76 % de desarrollo a los 16 días. El mejor tratamiento, para el desarrollo de los embriones, fue el de 5ppm de BA...
