Introduction: The prevalence of cardiovascular risk factors such as overweight, dyslipidemia, hypertension (HTN) and diabetes mellitus (DM2) has increased in recent decades, so there are multiple programs to reduce this prevalence. Objective: To evaluate the early effect of a program aimed at reducing cardiovascular risk factors in secondary education teachers. Methods: An intervention study was carried out based on the application of physical exercises and nutritional education workshops once a week for three consecutive months. General data were recorded and the lipid profile, glucose, blood pressure and body composition were quantified by using the bioimpedance balance, at the beginning of the intervention and 3 months later in the intervention group and the control group. Introduction: Physical inactivity among secondary school teachers increases cardiovascular and metabolic risks, highlighting the need for effective intervention strategies. Objective: To compare changes in body composition, lipid profile, and blood pressure following a physical exercise and nutritional education program. Methods: A prospective observational study was conducted with 556 teachers, divided into a program group (274) and a no-program group (282). The program included guided weekly exercises and nutritional workshops over three months. Introduction: High rates in anthropometric parameters such as excess weight, body fat, visceral fat, hypertension generate serious problems that affect the health of the general population. Objective: To identify the effects produced by the intervention program "integral diet and physical exercise" on anthropometric parameters and blood pressure in a community in Salvador de Bahia. El objetivo de la presente investigación fue determinar la composición nutricional y digestibilidad de la harina de arveja chata (Lathyrus sativus L.) cocida en ratas albinas de cepa Holtzman, Lima; es de nivel descriptivo, tipo aplicada y diseño experimental. En el presente trabajo se formula y aplica el análisis exergético al conjunto de elementos consumidores de energía calorífica de una planta típica de harina de pescado, estimando de forma experimental al calor específico de las mezclas sólido-líquido-vapor que conforman la materia prima y el vapor, con el objetivo de optimizar el consumo energético haciendo modificaciones en la instalación original y logrando así la reducción de costos de operación. Nuggets are increasingly consumed, due to their easy preparation and unique qualities of taste, texture and overall appearance. The objective of this study was to research the effect of substituting wheat flour for quinoa flour and amaranth flour in the batter for the production of giant squid nuggets, fried at 180 °C for (30s) followed by 190 °C (10s). Inclusion levels were 10, 20 and 30% of quinoa flour and amaranth flour in the formulation of the batter. Apparent viscosity (AV) was measured using a RVDV-III Ultra RY82670 USA programmable Rheometer, the samples were adjusted to a temperature of 15 °C and measured using an RV5 spin at a penetration speed of 25 rpm, equipped with V3.2 Build 47-1 Rheocalc Software: Rheometer # 1, Windows version.
