Food irradiation remains underutilized in Brazil, despite the approval and regulation of the official health authority since 1973. However, consumers risk perception, mostly due to lack of information about the technology, seem to be the main barrier to the adoption of food irradiation by the Brazilian industries, like in other countries. The aim of this study was to investigate the effect of information on the acceptance and purchase intention of minimally processed and irradiated organic watercress (Nasturtium officinale). Consumers (N=236) participating in the sensory acceptance test were divided into four experimental groups according to an experimental design which combined presence or absence of information about the food irradiation process – main characteristics, benefits to food safety and preservation, cost-benefit and environmental issues - and identification or not of the i...

Several kinds of emerging technology have begun to be applied to food processes as prospective alternatives to conventional methods.  Among these, ultrasound has been used. Despite the vast literature on the subject, some important aspects, including the sensory and hedonic perception of consumers towards this technology have not been properly addressed. In this study, consumer attitudes toward expected acceptance, pricing and purchase intention of guava juice processed with ultrasound technology were analyzed by using the conjoint analysis. The holistic perception of guava juice using projective mapping was also evaluated. The results indicate that consumers have greater acceptance and purchase intention for products that inform them of the benefits of the ultrasound process, while purchase intention was mainly influenced by the lowest price. Moreover, the product information regar...

Ecological and local markets emerge as an option where both producers and consumers can maximize their benefits while deciding to participate in ecological behaviors such as maintaining production processes with low environmental impact, adequate waste management and the reduction of pollutants discharged into the environment, which gives added value to the benefit of the local producer for maintaining their healthy environment. Meanwhile, the consumer can maximize their usefulness through the purchase of products that cover their consumption needs, but also provide additional utility based on their ecological attributes, valued by this type of consumers who appreciate these attributes as health benefits or environmental safety. The truth is that organic and local products have been able to increase their diffusion thanks to the structures of the new media that allow rethinking the roles...

This systematic literature review, prepared according to the PRISMA methodology, documents the trends in studies on the impact of social media influencers on consumer behavior in Ibero-America between 2010 and 2020. The bibliographic search with keywords was carried out in the EBSCO, Redalyc, and Scielo databases to guarantee the academic quality of the articles. A thorough two-stage review process of the articles was carried out before their final selection, which was systematized in an Excel table. The techniques of concept maps and summary sheets were applied to synthesize the information of the studies selected in an organized way. The articles chosen allowed systematizing the trends into four categories, which address the charact...

This article discusses the importance of ICTs in education based on their use in the teaching-learning process, recognizing that historically they have been applied for the benefit or detriment of humanity. It analyzes the production of information and knowledge in today's societies, from the perspective of non-professional informants found in virtual networks, as well as the responsibility of the academy in the generation of knowledge. It is recognized that, as consumers, we have a lack of skills to be able to choose the best information among all the possibilities presented in the network; in this problem also emerges the Dunning-Kruger syndrome that forces us to evaluate our competences before judging or prejudging a subject or discipline of knowledge. A call is made to address Educommunication as a strategy for the promotion of generational dialogue, between teachers and students, in...
