Sumario:Peruvian rum from earlier times won medals in international competitions, something that for the common Peruvian was very natural. I had a good product, worthy of any international bar. The characteristic of Peruvian rum resides in the type of cane it comes from, and hence its advantage versus other types of rums, such as Central Americans. The purpose of this research work was to know and evaluate the physicochemical properties of Cane Rum. In consideration of the above, the present project is proposed, which can serve as a precedent for the inclusion of these results in future Agro-industrial projects; and know the main physicochemical properties of rum. It is important to perform the physicochemical and sensory analyzes in order to know their characteristics, see their differences or similarities and, where appropriate, and if possible improve those characteristics that are not satisfactory to the consumer. Improving a characteristic will result in an increase in the sale of the product, and therefore greater income for the producer. This paper explains how these analyzes are performed and the values can be compared with other similar liquor brands; as well as provide the results of the analysis. The results obtained are very similar to other brands of competitive liquors, noting a small difference between them.
