Peruvian rum from earlier times won medals in international competitions, something that for the common Peruvian was very natural. I had a good product, worthy of any international bar. The characteristic of Peruvian rum resides in the type of cane it comes from, and hence its advantage versus other types of rums, such as Central Americans. The purpose of this research work was to know and evaluate the physicochemical properties of Cane Rum. In consideration of the above, the present project is proposed, which can serve as a precedent for the inclusion of these results in future Agro-industrial projects; and know the main physicochemical properties of rum.
