| Sumario: | The objective of the present investigation work was to evaluate the effect of the factor of severity (considered as the combination of time: 5, 15, 25 min and autoclave temperature: 121ºC) with the later time of storage (up to 32 days to 16ºC and HR: 56% approximately) on the characteristic chemical physical and recount of fungal mesophilic of paste andean lupine desalkaloidized (Lupinus mutabilis) creole variety with a content of solids to 24% p/p. Among the characteristics chemical physical valuated in the andean lupine paste they were contained of solids, pH, acidity titulable, soluble solids, index the TBA, electric conductivity and sugars reducers. The paste of andean lupine desalkaloidized without thermal treatment not had a time of useful life bigger than 4 days to conditions of 16ºC and HR of 56%. An increase of the factors of severity (Log Ro) in the thermal treatment of paste andean lupine desalkaloidized it causes a descent of the pH, an increase of the acidity titulable, a bigger oxidation of the fats, an increase of the electric conductivity, an increase of the soluble solids and an increase of sugars reducers. After the thermal treatment a bigger time of storage to environmental conditions in hermetic flasks induced an increase of the acidity, a decrease of the pH, an increment in the indexes of TBA, an increase of the electric conductivity; an increase in the recount of fungil mesophilics; however it doesn't cause a variability in the parameters of soluble solids and of sugars reducers. |
