Sumario:The main objective of the present work of thesis was: evaluating the relation of every an one belonging to the properties thermophysical (specific heat, thermal conductivity, density and thermal diffusivity), with temperature, for nectars of three native fruit trees of the Amazonia Peruana (aguaje, ungurahui and cocona), accomplishing the physicochemical corresponding analysis previously. The present investigation is somewhat diligent with quantitative focus and level of explanatory deepening with design correlational. When evaluating the relation between specific heat and the temperature in a status of 20 to 80 °C , for each one of the mentioned nectars, the nectars resulted from cocona and aguaje, the ones that have the major (3866.52 J/(kg.°C)) and minor (3651.48 J/(kg.°C)) evaluated specific heat to 80 °C, respectively. Results indicate that the cocona and aguaje nectars, they were the ones that have the bigger (0.6040 W/(m.°C)) and minor (0.5672 W/(m.°C)) evaluated thermal conductivity to, respectively. The evaluation of the relation between density and the temperature, in a status of 20 to 80 °C, for each one of the mentioned nectars, they show that the nectars of sea aguaje and of cocona, they are the ones that have the bigger (1102.89 kg/m3) and minor (1072.16 kg/m3) evaluated density to 20 °C, respectively. Results indicate that the nectars that have the bigger (1.49×10?7 m2/s) and minor (1.44×10?7 m2/s) evaluated thermal diffusivity to 80 °C, they are the of cocona and the of aguaje, respectively.
