Adicionalmente, su gran adaptabilidad al cambio climático hicieron que Bolivia, con el respaldo de otros países, logre que la ONU declare el 2013 como Año Internacional de la Quinua, el cual tenía como objetivo incentivar el consumo de quinua para suplir la inseguridad alimentaria en zonas pobres del mundo. En ese sentido, en la presente investigación se analizó la zona rural de Junín. No obstante, los resultados fueron opuestos a los esperados: hubo un shock en los precios de la quinua, haciendo que los que no producen disminuyan su consumo y los que cultivan prefieran venderlos antes que consumirlo. Por otro lado, para hallar el estado situacional de la seguridad alimentaria, se probó sus cuatro dimensiones con datos del ENAHO 2016: disponibilidad, acceso, uso y la estabilidad, este último se probó con el modelo probit; se encontró que hay inseguridad alimentaria. Mediante la desviación estándar se comprobó que hay mayor variación de precios de productos locales en comparación de bienes importados. Asimismo, por el método Tobit, se obtuvo las elasticidades precio de la demanda de los alimentos de la canasta básica rural, arrojando como resultado que, hay mayor elasticidad de alimentos ingresados de otras regiones en contraparte de los locales. Finalmente, utilizando el modelo Tobit se proyectó el consumo de la quinua cuando cambia su precio, se vio que los productores incrementan su ingesta y los que compran reducen su adquisición; sin embargo, en el consumo promedio de calorías de todos los alimentos de ambos grupos, no hay diferencia significativa.Decades ago, quinoa was considered an inferior food, however, recently the discovery of its nutritional properties has generated an increase in its consumption. Additionally, its great adaptability to climate change made Bolivia, with the support of other countries, to get the UN to declare 2013 as the International Year of Quinoa, which aimed to encourage the consumption of quinoa to replace food insecurity in areas poor of the world. In this sense, in the present investigation, the rural area of Junín was analyzed.
